Green and red pepper chunks
mushrooms
cherry tomatoes
zuchinni chunks
even a pineapple chunk
baste with a marinade of pineapple juice, brown sugar and a tablesppon of oil
or just salt, pepper, lemon seasonings and a little brushed oil
Sounds yummy!

Shrimp Kabobs

1 lb large raw Shrimp
1/2 cup Vegetable Oil
1/4 cup Soy Sauce
2 Tbsp chopped crystalized Ginger
1 tsp Onion Powder
2 small Zucchini, sliced
1/4 cup Lemon Juice
2 cloves Garlic, finely chopped
1 1/2 tsp ground Ginger
16 oz can of Pineapple chunks

Peel and devein shrimp. Drain pineapple chunks. In medium bowl, combine oil, lemon juice, soy sauce, garlic, ginger and onion powder; mix well. Add shrimp. Cover and refrigerate 3 hours or overnight. Place shrimp, pineapple and zucchini on bamboo skewers (soaked wood skewers 1 hour in water). Save mixture for basting marinade. Grill or broil 3 to 6 minutes per side or until shrimp are pink, basting shrimp kabobs frequently with marinade. Make 6 kabobs.

If you have the freshest ingredients, they don't need a marinade. Drizzle a little olive oil, salt and pepper and grill away.... You'll really get the freshness shining through that way.
