Can you get to a grocery store? In the section where you find packaged taco spices and meat marinade, there is also a package for meatloaf spices. (It's a small rectangular envelope). There is usually a quick recipe on the back.

Here is a fast and easy recipe Equal parts ground beef, ground turkey , and ground buffalo/bison (this gives a lot of flavor but is still healthy, if you can't get bison/buffalo use half turkey and half beef) Add 1/2 of an onion finely chopped 1-2 eggs depending on size 1 1/2 cup bread crumbs 1/2 can French's Onion Rings 1/4-1/2 of a bell pepper (depending on your taste) Two small splashes Worcesteshire 1 cup Ketchup 4 tablespoons Heinz 57 sauce Garlic salt Freshlly ground black pepper mix together by hand, divide in two and place each into a loaf pan. Cook 325 until pressure on top of loaf yields clear liquid. At that point put a light coating of either ketchup or romato sauce on top of loaf and return to oven for 5 minutes, or just until top begins to caramelize

Mashed potatoes couldn't be easier:
boil potatoes (if you get thick skinned potatoes you might want to peel, but I prefer getting something like Yukon Gold potatoes, which have a thinner skin to start with, and leaving them on. Wash first, of course.)
When they're done: mash them with butter and milk. Don't use anything electric and don't use a "potato ricer" as they make the end result much too "whipped" and smoothe....with no character at all.
Meatloaf:
Position rack in the center of the oven. Preheat the oven to 350. Lightly grease a 9x5 inch (8 cup) loaf pan. (Alternatively you can forego the pan if you don't have it and just mold the prepared meatloaf into a freeform loaf on a baking sheet, although the result is a bit less juicy.)
Combine in a large bowl:
24 oz ground meat (I buy "meatloaf" meat at Whole Foods -- in other words, a packaged combo of fresh beef, pork, and...something else my mind is blank. But most grocers will have some kind if "meatloaf" package of varied meat. Alternatively, this recipe calls for 12 oz each of ground beef chuck and ground beef round.)
1 1/2 cups finely chopped onions
1 cup breadcrumbs (or quick cooking rolled oats)
2/3 cup ketchup
2/3 cup finely chopped fresh parsely (I skip this a lot depending on whether it's handy -- when I skip it I do add to the meatloaf mix roughly the same amount of shredded carrot or zucchini or a combo of the two)
3 large eggs, lightly beaten
1 teaspoon ground thyme (skip it if it's not handy)
1 teaspoon salt
1/2 teaspoon ground pepper
knead the mixture with hands until well blended but do not overmix.
put mixture in loaf pan mounding the top. place the pan on a baking sheet and bake until the meat is firm to the touch and has shrunk from the sides of the pan (or until an instant read thermometer inserted in the center of the loaf reads 160), which is about 1 - 1 1/4 hours according to The Joy of Cooking (and closer to 1 1/2 according to me). Pour off any excess fat and let stand for 15 minutes.
The meatloaf recipe is the "Classic Meatloaf" recipe from the Joy of Cooking.
I had never made meatloaf until recently and found 1) it's incredibly easy and 2) you don't have to stick to the letter of the recipe either (hence my usual addition of grated vegetables).

This is my recipe, and it's about as easy as easy ever gets:
1 1/2 pound hamburger
4 slices of bread, finely crumbled
1 egg
1/2 tsp. onion salt
1/2 tsp. garlic salt
1/2 tsp. parsley
2 tablespoons Worchestershire sauce
2 tablespoons ketchup or barbecue sauce
Extra ketchup or barbecue sauce for topping
Mix all ingredients together, and place in a loaf pan. Bake at 350 degrees for 45 minutes to 1 hour, or until meat loaf is done. Pour off the accumulated grease from time to time, using a spatula to hold the meatloaf down as you drain the grease.
About ten minutes before you think the meat loaf is done, top with ketchup or barbecue sauce and return to the oven long enough to form a glaze.

Easy meat loaf
3 pounds ground beef
1 lg onion diced
1 large bell pepper diced
1 cup bread crumbs
2 eggs
1 tsp salt
1 tsp pepper
Put in a greased bunt pan. Bake at 375 degrees for 1 hour or until the center is at 160 degrees.
You could also top this with ketchup if you like or add tabasco or jalapeño if you want it spicier.
Easy mashed potatoes
2lbs baking potatoes (peel if you want)
3 tbsp butter
1 cup milk
1/2 cup sour creme
salt and pepper to taste
Boil potatoes till you can run a knife threw them very easily probably about 20 minutes depending on the size of potatoes. Mash the potatoes with a potato masher till smooth. Mix in all the ingredients. Serve.

Take a couple of pounds of burger, add half a package of crushed crakers, about a cup of minced onion and 1 raw egg. Mix together by hand, form into a loaf shape and place
in a shallow pan. I like to coat mine with kitchen bouquet before baking in the oven at 325 for an hour or so, until the temp is about 165 (it will keep cooking once you take it out for about 15 minutes)

In the meat section of the store they sell packages of meatloaf mix, which is usually 2 parts ground beef with 1 part ground pork. Mix the two with 4 slices of bread, broken into pieces. Add enough milk to moisten the bread. Add one egg, 1 tsp worsteschire sauce, pepper, salt, and 1/2 tsp poultry seasoning. Mix well, bake at 400 degrees for 45 minutes to an hour...stick with knife to see if clear juice runs out. If you want to glaze it, mix 1/2 cup ketchup with 1/4 cup brown sugar and top the meatloaf 15 minutes before you take it out of the oven.
Cook 1-2 russet potatos for each person, depending on size. Peel and cut up the potatoes, put into pot and cover with water. Boil till a fork goes into them easy. Drain, mash, add enough butter and milk to make them creamy but not too much liquid. Add 1/4 cup of milk, a couple of tablespoons of butter to start with, then add more milk as needed. Salt and pepper to taste.
You can never go wrong adding garlic powder to either the meatloaf or the potatoes, if you have it.

Meatloaf

1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce
Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute
In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.
Mashed Potatoes
6-8 large potatoes, peeled and chopped
1 cup milk
1/4 cup butter
salt and pepper to taste
Boil potatoes until tender, pour off water. Allow to sit 5 minutes to dry out a bit. Add mik, butter and salt and pepper to potatoes, mash well with a potato masher or with an electric mixer. Add more milk and butter as needed.

To 1 1/2 pound of ground beef add:
3/4 cup oatmeal or a3 slices of bread crumbs
1 or 2 eggs
chopped onion or onion powder
catsup like 1/4-1/2 cup
any other spices you want in small amounts like salt, pepper, oregano, dill, parsley.
I have used salsa or tomato sauce or tomato soup in it instead of catsup. It all depends on what you have.
Mix it all up and put in a baking dish to fit in.
Drizzle some catsup on top.
Bake it 350 deg for about 45 min - 1 hour. Check it with a meat thermometer -160 deg. in center.

meat loaf: 1 lb grnd beef, 2 TBS finely chopped onion, 1 egg, 1/2 cup of uncooked oatmeal or dry bread crumbs, or thoroughly smashed saltine crackers, salt, pepper to taste and a small can of tomato sauce or ketchup, (1/4 c). Smash everything together with your hands until well mixed, put into a lightly greased loaf pan and bake for 25 to 30 minutes.
mashed potatoes: boil taters until well done. Drain water. add some milk, sour cream (just enough to make them creamy), butter, salt and pepper to taste. smash with a fork or smasher.
