You can make some spaghetti. It`s really simple but probably won`t give you a good grade because it isn`t very complicated and creative. Maybe find a recipe on how to make some meatballs. Those will probably be hard to make but it`s worth the effort for the good grade. Ravioli is good too. I personally don`t know how to make it though.. Just an idea. Or make some garlic bread. I think that`s italian. Maybe.. Or if your a slacker, go to some un-known italian store/restaurant and buy some food. Put it on a plate at home and bring it into class. Hopefully they won`t notice that it`s store bought and not made by you..

I would prepare the "Bruschetta", or "fettunta" (oiled slice) as we call it here in Tuscany, even if I guess you'll be missing the main 'must' of the bruschetta that's the bread from Tuscany. Ours is a not-salted bread ; try to find something similar in yr place.Preparation of the "bruschetta" is very simple and you don't need to cook it on place. You may prepare the toasted bread slices in advance and top them in a second time, at the school, in a very simple way. It's an easy, tasty and healthy typical Italian 'antipasto' ...!!
Here is how to prepare it :
Slice the bread, not too thin (0,6/0,7 ") and put slices on the grill for a 20-25 seconds by watching they don't burn..!! When slice is golden colored you should turn it and grill the other side. Let them cool and then just rub the slices on both sides with garlic (the white one.!!) and top only one side with (that's mandatory..!!) Italian extra-virgin olive oil , salt , pepper and....enjoy...!!
Variations may include toppings of spicy red pepper or tomato and basil.
One more tip - Prepare a lot of paper napskins since hands easily get very oiled. Just in case is also allowed to get clean by licking one's own fingers...!!

How about an antipasto platter? It doesn't involve cooking, and it's about as easy as Italian food ever gets.
Antipasto Platter
Anchovy filets, rinsed and patted dry
Prosciutto, sliced very thin (Italian ham)
Salami, sliced very thin
Chunk white tuna, in bite-size chunks
Asiago cheese, cut in thin strips
Provolone cheese, cut in thin strips
Marinated mushrooms
Marinated artichokes
Marinated Red Peppers
Green olives
Ripe olives
Pepperoncini (pickled peppers)
Sliced Hard-Cooked Eggs
Romaine lettuce leaves (to line platter)
Lay the lettuce leaves on a large platter to form a bed. Roll the meats into cigar or funnel shapes. Place all of the items on the platter in an attractive manner, either center to outside or side-by-side. I would use the marinated and pickled items in between the various meats and cheeses. Think of the colors as you separate. The platter can be prepared several hours ahead and refrigerated until about 30 minutes before serving, then brought to room temperature.
(Note: the variety is more important than the quantity or specific ingredient. You're aiming for a nice balance of typical Italian meats, cheeses, and pickled veggies to be served "anti pasto," or before the pasta.

Rigatoni...
STOVE TOP/OVEN VERSION...
All you do is boil pasta....I like the whole wheat fiber penne(if you use this one boil extra long time to get that grainy taste out)..stove top on high for about 15-20 mins but just taste one
**Also, I rinse the cooked pasta if I use the non whole wheat to get rid of the extra starches***
Use a ground up meat ... my fav is the spicy Owens or Jimmy Dean Sausage (I get the one on sale)
Cook and ground it up on a med to high heat...I also rinse this in the colander as well to get rid of the excess grease
Classico Sauce...my fav is the spinach one or the spicy red pepper
Get your dish and mix all the ingred. together put some shredded cheese on top and bake in the oven until it is done on about 350' usually about 30 mins but I stir it up in the middle to get the cheese all mixed in it.
Top it off with some more cheese and serve. Easy and takes no time at all!
MICROWAVE FAST VERSION
Hope you have a stove but if not you can mix in a plastic container and cook in the microwave but exchange the meat for a pre cooked meat.
They also make a pasta that is already cooked so you could exchange that as well.
Otherwise, mix together as above (don't forget your sauce)and cook in microwave for 2 mins stir and then cook until done...you will have to check it because I am not 100% sure of the time. Top w/ more cheese and Enjoy!
*** The amount is up to you but you just buy double ingred. if it is for a large group.

Penne with Tomato, Basil, Olives and pecorino
(Serves 4)
• 750g tomatoes
• olive oil
• sea salt and freshly . ground black pepper
• good-quality balsamic vinegar
• 500g penne
• 200g black olives, stoned and halved
• a small bunch of fresh basil, leaves picked
• a chunk of pecorino cheese, to serve
Preheat oven to 200°C/400°F/gas 6.
Throw the tomatoes into a large roasting tin, drizzle them with olive oil, season with some salt and pepper and pop them in the preheated oven for 20 minutes. Once they’re roasted, squash the tomatoes with a fork to get the juices going and drizzle over some balsamic vinegar.
Bring a large pan of salted water to the boil and cook the pasta according to the pack instructions until al dente. Drain the pasta and add the roasted tomato sauce and the olives. Tear over most of the basil leaves and toss everything together. Season and serve with the reserved basil leaves scattered over and some freshly grated pecorino.
Delicious and easy! :P
