Fairchild has a separate data sheet for each with minor casmetic variations. The pinouts and electrical sprcifications appear to be the same, though. Can I use these parts interchangeably depending on which is cheaper? And if so, why are there two different, yet so similar, part numbers?

The 2nd Output Enable (2OE) is inverted on the 244 and not inverted on the 241. The 244 has slightly better timing specs. (very slight).

Other than that, the 2 parts are identical in form, fit, and function.

Check the specifications carefully. The difference may lie in subtleties such as whether the output pins have pull-ups or are open collectors for use in wired-OR applications.
