Ounce for ounce, Saffron is the world's most expensive spice. Nonetheless I think vanilla is more expensive -- as a practical matter. A very tiny bit of saffron goes a long way and most recipes call for only a very small amount. Vanilla, the world's second most expensive spice, is used in greater quantities. Most people don't use real or pure vanilla -- because of the cost. (Artificial vanilla is fine for most people's palates as well...but I'm sure that if people were actually more familiar with the taste of real vanilla, that wouldn't be true!)

Saffron...it is derived from the stigmas of the saffron crocus. Saffron grows well in areas that have cold winters & warm dry summers. Saffaron is native to the Mediterranean environment, characterised by cool to cold winters, with autum-winter-spring rainfall, & warm dry summers with very little rainfall. Traditionally, saffron is grown on raised beds to allow good drainage & easy access for picking. Saffron corms are planted out during their dormant period in summer. New saffron corms also grow above the old ones each season, so they creep towards the soil surface by 1-2 cm each year. There is alot more information on this so, go check out the web site. Saffron is the world's most expensive spice. And that is because it uses only the three strands of the crocus sativus flower - a type of iris, which blossoms in the autumn in the northern hemisphere. At the time of harvest the three red strands or stigma need to be plucked from each flower by hand. This is time consuming and labor intensive and means that about 500,000 strands will need to be gathered in this way to produce 1kg (2lbs) of the spice.

Probably saffron. But could also be tumeric in the rice. Lots of yellowish curry spices..

Saffron...I LOVE Saffron...
Seafood Paella is the best sh!7 in the world...and it just isn't the same without REAL Saffron.

saffron? i know it is quite expensive...and there used to be a nickname referring to it as gold bc of the color and price/value in trading...pretty sure it's saffron.
