Chopped up hard-boiled eggs and mayo is the basic recipe. Many people add other stuff such as celery, onion, paprika, garlic, cream cheese ... you can add almost anything you want! I like mine with just mayo, a bit of mustard, and some salt and pepper. (No onions, peppers, pickle relish or celery!) Here are some great egg salad recipes from my favorite recipe site:

There are a lot of variations on it, but my personal favourite is to take the boiled eggs and mash them with some mayonaisse, mustard, salt and pepper to taste, then adding in whatever else I have around. I like to add onions, a dash of paprika, some sweet relish, among other things. Vegetables chopped very fine can make a good addition.
Egg salad is definitely an experimental sort of food. Try a few variations and see what you like best!

oh yum!
boil the eggs, peel them, cut them in 1/2 long ways. carefully remove the yokes, placing them in a bowl. rinse the whites and dry them on a paper towel. next lay the whites out on your serving dish. mash the yokes with a fork to remove lumps, then add enough mayonnaise to get the consistency of smooth-mashed potatoes (you can also use a hand mixer). Next add a tiny bit (very little, on the end of a teaspoon) of mustard to get the desired color. If desired, you can add a couple of dill pickle slices that have been drained and diced. add salt and pepper to taste. next take the yolk mixture and spoon it back into the shell halves-the egg whites. **You could also place the mixture into a plastic sandwich bag and twist it into a point. cut a small hole in the point and then squeeze the yolk into the egg whites (this is a prettier look).** then sprinkle paprika over the deviled eggs (like salt) for looks. chill and serve. Yummy!
For egg salad, just chop the egg Whites and mix with the yolk mixture once the desired consistence has been achieved. serve on your favorite bread with pickles, lettuce, or whatever you'd like.

Boil and peel the eggs.
Chop the eggs, then add mayo, finely chopped celery, pickle relish, salt and pepper. Some people add a bit of mustard, some go apoplectic at the thought of it. Same with the pickle relish. Pretty much everyone has their own recipe variations, but that is the basic one.

first I hard boil about 4 to six eggs
Then I cool them down overnight in the fridge.
then I seperate the yolks from the whites
then I pulverize the whites with a fork
then I add to the yolks a tsp of mustard, a 1/4 cup of mayonaise,a 1/4 cup chopped onion, a Tsp of sweet rellish, a splash of tobasco, a dash of salt and a few` shakes of black pepper.
I whip this all together with a foek, then i add in the pulverized whites.
Next I put it on wheat bread... then I eat it

I make egg salad with mayo, chopped onion, and a dash of salt and pepper. when making the sandwich, you can add a lettuce leaf and a slice of tomato. Good.

Need:
eggs
mayonnaise
relish
salt and pepper
bread
Boil eggs. (One egg per sandwich). After boiling, set eggs in cool water until slightly warm. Peel off shells. Put in a bowl and cut/mast them with a fork until you have a chunky mixture. Add a mayonnaise, relish, salt and pepper all to taste and mix well with fork. Put between two slices of your favorite bread and serve.

Cut up hard boiled eggs then and Mayo and Mustard until you get a consistency you like, then add what ever you like to spice it up. A lot of recipes use: pickles, salt, pepper, garlic salt, paprika, onion(green), or whatever. Personally I like Garlic salt, chopped up Bread and Butter pickles, and a little bit of Tobacco sauce.

INGREDIENTS
8 eggs
1 tablespoon mayonnaise
2 tablespoons prepared Dijon-style mustard
1 teaspoon dried dill weed
1 teaspoon paprika
1/2 red onion, minced
salt and pepper to taste
DIRECTIONS
Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
In a large bowl, combine the egg, mayonnaise, mustard, dill, paprika, onion and salt and pepper. Mash well with a fork or wooden spoon.
Serve on bread as a sandwich or over crisp lettuce as a salad.
