Banana bread
Ingredients
225g/8oz self-raising flour
100g/4oz butter
150g/5oz caster sugar
450g/1lb bananas (the softer the better), peeled and mashed
½ tsp salt
2 eggs
175g/6oz mixed dried fruit
Method
1. Pre-heat the oven to 180C/350F/Gas 4.
2. Mix all the ingredients except the dried fruit together. You can do this in a food processor or by hand in a basin.
3. When they're all thoroughly mixed, add the dried fruit. Spoon the mixture into a 1kg/2lb non-stick loaf tin, spread it out evenly and bake it for one and a half hours. The loaf is done when a skewer pushed into its middle comes out clean.
4. Cool on a wire rack, then slice before serving.

I would go with the banana bread, and as a matter of fact i made one last night, gonna share my recipe with you, it never fails and turns out a top banana bread every time;
3oz margarine
10oz sugar
12oz plain flour
1 1/2 eggs
1 1/2 lb ripe bananas (unpeeled weight)
1/4 level teaspoon salt
1 1/4 level teaspoon bicarbonate of soda
1; cream together marg, sugar + eggs
2; beat in chopped bananas
3; fold in sieved flour, salt + bicarb
4; grease and line loaf tin
5; place in oven middle shelf gas mark 4 or 180c 1 1/4 hours
though i tend to favour a lower gas heat and to leave in longer, as long as you stick in a knife and it comes out clean then its cooked thoroughly though sometimes a little banana goo not uncooked sponge, this is my all time favourite recipe, good luck hope you enjoy.

Banana Cake, its so easy to make:
125g margerine
100g sugar
1 egg
175g self raising flour
3 ripe bananas
1teaspoon bicarbonate soda
Cream marge and sugar together, beat in the eggs, add sifted flour and bicarbonate gradually, mash the bananas and add to mixture. Put in a greased and floured tin, and bake in preheaten oven for 1 hour at 160 C.
Its lovely served warm with custard or ice cream.

You can freeze the banana. The easiest way is to take off the skin, and put in a zip lock bag. When your ready to use them just take them out and late them warm up, or even zap them in the microwave. They are great this way for cooking. I like to mash up 2 bananas and add it and some nuts to my pancake batter. Makes a great change from regular pancakes. If you really want to be different you can add chocolate chips to the batter and have them with peanut butter instead of syrup. Not very healthy, but certainly is yummy.

This is a delicious cake using that favourite of all fruits. Ingredients * 1/2 cup butter * 1 1/2 cups granulated sugar * 1 cup mashed banana * 2 eggs * 1 teaspoon vanilla * 2 cups all purpose or cake flour * 1 teaspoon baking soda * 1/2 teaspoon salt * 1/2 cup sour milk * 4 tablespoons melted butter * 1/4 cup cream * 1 teaspoon rum or flavouring * 3 cups, or less, icing sugar # Heat oven to 350 degrees. # Butter and dust with flour a square 9 inch cake pan. # Cream together the butter and sugar. Beat well. # Beat in banana, eggs and vanilla. Continue beating until smooth. # Blend together the flour, baking soda, and salt. # Stir the flour mixture into the butter mixture. # Beat in the sour milk. # Pour batter into prepared pan and bake for approximately 45 minutes or until cake tester comes out clean. # Remove from oven. Cool for 5 minutes. # Remove from pan and cool on rack. # When cake is cool, slit into top and bottom layers. # Make icing as follows. # Mix together the melted butter, cream, and rum. # Beat in icing sugar until the icing is smooth and just thick enough to still spread. # Fill and frost the cake. Banana Pudding - All you need is a box of vanilla Jell-o pudding and Nilla Wafers, Cool Whip and of course bananas. Put a layer of Nilla Wafers on the bottom of glass or metal baking pan. Mix pudding according to directions. Slice bananas and layer over cookies then top with pudding and finally Cool Whip. Refrigerate and enjoy!

Hi. Even though all those recipes sound really nice,did you know more ripe the banana's are the more sugar they contain. i love banana sponge.

Bananas Foster.
1 /4 cup butter
1 cup brown sugar
1/2 teaspoon cinnamon
4 bananas, cut in half,lengthwise,and then halved
1/4 cup dark rum
1/4 cup banana liqueur
4 scoops vanilla ice cream
In a large skillet, over low heat, combine butter, sugar and cinnamon, stirring until sugar dissolves.
Add bananas, stirring gently until bananas begin to soften and brown.
Carefully add rum and liqueur, cooking until rum is hot.
Tip pan slightly and ignite rum.
When flames subside, remove bananas from pan and serve 4 pieces of banana with 1 scoop of ice cream Generously spoon warm sauce over top and serve immediately.
