Anyone that tells you anything about low carb diets is insane. Your brain uses complex carbs to exist. My grandmother went on that diet, hoping to lose weight, then went to the doctor to find that her cholesterol was off the charts. I even tried the diet and had horrible migraines because of it, which now I know the reason I had them. You compare South Beach to Atkins and they claim it's not the same--but when you look at it, it is. For the record, Atkins died and was overweight when he died.
Now to answer your question, the best diet to have is one that includes a lot of fruits and vegetables, preferably raw because cooking them cooks away some of the nutrients. Limit, or avoid, animal products. There are many replacements that will give you the yogurt, milk, cheese, and meats that you normally would miss. I cooked chili with TVP in it and my room mates thought it was beef. So don't buy into people saying it doesn't taste the same. Also for calcium and iron, there are MANY vegetables that give you more of both essentials than milk or meat could ever offer. Generally if you're wanting to lose weight you'll eat less calories than you burn off and if you want to maintain your weight you'll eat the same amount or slightly more calories than you burn off. Limit the amount of sodium, soda, caffeine, and sugar you intake but worry more about calories and fat than carbs. Totally make an effort to take fiber supplements and any other supplement that meets your needs. I take biotin, iron, and fiber but I avoid multivitamins because B-12 makes you eat more.
Add more exercise in you routine. It can be as simple as walking to the mailbox rather than driving, or doing some chores while listening to music. Don't worry with all that boring stuff--find something you love doing. If you like to hike go for it. If you get a rush off of dancing to 80s music that you don't want anyone else to bear witness to, make everyone leave, and dance to your heart's desire. It can, and will, work--just believe in yourself as a capable person able to obtain what you want in this, and all other aspects of life, and you'll succeed.
As a mother of two, I've used an exercise ball to help with my stomach--you may find that helpful but if it's boring then find another outlet. I will turn on some music and use it to do sit ups and crunches because it doesn't put strain on my neck or back. I also don't have a lot of time (children and school) so I find it an easy way to make the most of my time.

find calorie/fitness calculator on the net, enter all your stats and it will tell you how many calories you need a day to maintain, take off 300-400cal off that number and thats how much you need to lose.
eat 5-6 small meals a day (eat every 2-3 hours)
5-8 servings of fruit and veggies a day
8 glasses of water
have complex carbs for breakfast - they give you energy
have lean meat (protein) for dinner - repairs muscle
cardio exercise 4-6 times a week for 30-50min, light weight training
dont consume foods that are made of white flour (white bread, cakes, past etc.), sugar loaded foods (cookies, icecream, candy etc) and nothing fried, oily.
ofcourse you can spoil yourself once in a while with a little treat:)

There are lots of places online where you can learn to lose weight and/or build some muscle. Here is a good place to start. Losing weight can be hard work, but it is well worth the effort. Just remember baby steps count too. Keep working out and eat healthy and in a few weeks you may surprised by the results! With every birthday that ends in 0, it gets harder to stay in shape. Walking is a great exercise for general health.
Daily food intake: 2 servings lowfat or non fat dairy,
5 servings of fruits and/or veggies, 2 serving of bread/
rice/pasta/potatoes/cereal, 2 servings of protein (meat).
Beef no more than once a week. Limit alcohol, sweets,
and soda. Drink water. plan 3 meals and 2 snacks.

Yea, once you hit like your mid 20's your metabolism slows down...making it harder to burn the fat. I do a dvd workout that takes 30 min a day (no time for the gym either!). It's about $50, but I don't think its too bad for a whole kit. Email me if you want the link (too long to paste)

Remember that as you age your metabolism isn't as great as it used to be. Definitely stay away from anything w/ high fructose corn syrup... Not only is it in drinks, but tons of foods too. That stuff is evil. If you drink diet drinks, stay away from aspartame. It causes sickness and makes you crave food.
