The answer is found at Romans 15:4
"All the things that were written aforetime were written for our instruction, that through the comfort from the Scriptures we might have hope. . ."
OR. if you prefer 1 Corinthians 10:11
"These things were written for a warning to us upon whom the ends of the systems of things have arrived."

Jesus' followers expected Jesus to return within their lifetime. When the Apostles, the eyewitnesses to Jesus, began dying before jesus' return, men decided that the stories of Jesus needed to be written down to preserve His teachings.

If you read it you will notice that these were not just written by someone out of know where! these were guys that walked with him, talked with him, they saw the miracles the healings the demons cast into swine!
