The Humble Fried Egg:

5 min
1 servings

1 egg
1 teaspoon butter
1 teaspoon olive oil

1. Put the butter and olive oil in a non-stick frying pan and heat until the pan is good and hot.
2. Break the egg into the pan and immediately turn the heat down as low as it will go.
3. Cover and leave to cook very gently for 4-5 minutes, until the white is set and shiny.
4. The yolk will be cooked but still slightly runny.
5. Eat how you like it, in a bacon and egg sarnie, on top of Asian dishes like nasi goreng or on its own.
6. A perfect fried egg is a beautiful thing!

The pan should be of a good non stick quality. You need to put about half an inch of oil in the pan and gently heat the oil. I find that its better to have the oil cooler rather than hotter as eggs cook very fast, and if the egg goes into cooler oil you can adjust it as you need. Just get a dessert spoon and gently pour oil on to the yolk. Then gently make sure the egg is not in any way stuck to the pan with a spatula, rather than just diving in there. The egg should be ready to put out.

Heat the pan first. Crack the egg and drop it in. Fry until the edges get a little brown and do not flip it. The yolk will be just how you like it.

with the pan nice and warm and a tiny bit of melted butter, I gently crack the egg and let it go into the pan and hold the the shell there for 15 seconds to let the shape hold ,I then cover the pan with a lid and wait 2 mins and cut off fire. I then flip the egg in two mins .after 30 seconds i remove the egg. when I put the egg into the plate I flip it back original side up.
