I like the ham hock for two reasons:
The bone provides even more flavor and can be easily removed before serving or storing.

Funny you asked! Not more than an hour ago I got the ham hocks out of the freezer to thaw and put the beans in a bowl of water to soak overnight. I love ham hocks!!!!! Of course I will make corn bread to go with this.

I usually use ham hocks but I have a bone from a HoneyBaked ham leftover from easter in the freezer. Just waiting for the weather to cool down so I can make a big pot of beans or split pea soup or something.

We swear by ham hocks. Salt pork just doesn't have the same flavor.

Like Christy I prefer ham steak, it also has a small bone in the middle. I add some grated carrots, small creamer potatoes (cross pealed), and about 2 tbsp of pure unadulterated sweet butter.
Sweet corn bread and greens finish this meal off.

I prefer the hock, because it has bone in it. Bones are great for flavoring any soup.
