If you like fish buy 1 fillet of whatever you like and wrap them in a parchment pouch with aromatic veggies, onions, pepper, carrots, etc. You can make this immediately or freeze. If you freeze wrap the parchement in plastic wrap, then in foil paper.
Also remember that most major supermarkets have butchers. Have them wrap meat in single portions for you. It generally is not more expensive than if you bought a pack, especially if you are wasting food.
Another thing is to remember if you are doing take out it is not that much more expensive to eat out. Find a restaurant that makes their own fresh food. When I lived in NYC I found a Cuban restaurant. Generally their portions were too big, but I would eat the left overs the day after.
If you like soup, make your favorite soup and freeze it. Just don't add the pasta or potatoes until you are cooking the soup. To me they just taste grainy after freezing.
Buy ramekins, not creme brulee size ramekins, but a little larger. I know that IKEA sells these ramekins. You can make any type of single server casserole in them. Just have more sauce in there then you generally would. You can make lasagna, beef stroganoff, tuna casserole, etc. in them. Again, wrap it in plastic wrap and then tin foil.

When I first lived on my own and began the adventure of learning to cook, I made all kinds of things just for myself in trying things out and learning new recipes, etc... don't think one ever "finishes" doing that.
You're probably just used to buying large quantities of things since you were feeding more people, but many ingredients can be purchased singly or in small containers too (...and remember that you can buy *anything* that's being sold by weight in any amount you want, even if it's prepackaged to some extent-- e.g., grapes, asparagus, etc... I wish more things were sold by weight, like herbs for example, but some stores have more like things like that than others).
Freezing can be great of course in many ways, but unless you have a full-size freezer you're unlikely to have loads of room in there.
Also, on those occasions when I made more than enough for one serving, I'd have the rest for lunch the next day --or better, I'd wait *another day* then have it for dinner or lunch (with something entirely different the day between)... still do that.

A good meal for one is some pasta. Boil some pasta and throw in anything you may have: onions, peppers, broccoli (or any other veggie you may like), lite sausage, garlic, etc.
Be creative with whatever you have in your pantry and/or fridge.
Chili is a good, hearty meal that can be made ahead and frozen in single serving plastic containers. Just pop one into a sauce pan and heat up.

Get a rice cooker,they great you can cook rice in small amounts for just 1and you can put eggs in the rice to hard boil or veg to steam as well as fish.They don,t make a mess and are a lot cheaper and healthier than taking the canned route.

Since you like to cook, make big pots of soup or chili to freeze in individual portions. (If I were you, I'd leave potatoes out of the soups, they get watery when frozen). If you put them in ziplock bags and lie them flat to freeze, you can stack them or even store them upright like books to save freezer space. Or get small portions of chicken and take the leftovers in your lunch.

I don't know too much about cooking, but its easy just to buy frozen dinners and have that. I guess you could also make mac and cheese.
