From Apalachicola, Florida to Gulf Shores, Alabama, the beach itself is pretty much the same sugar white sand. however, the farther west you are, the more the area is still recuperating from Hurricanes Ivan, Dennis, and Katrina.
What do you want to DO while you are here (other than get married? Mexico Beach, Florida, is a very small, quiet town. The area is incredibly beautiful, but there's not much nightlife. Destin is has a lot to do, but it is very "touristy." Panama City Beach is very touristy, also, but not as upscale as Destin. Destin is more family oriented, and Panama City Beach is more college oriented. South Walton County is between P.C. Beach and Destin. It is a little more expensive than either, but it is also a little more secluded and near both. It also has a State Park that has cabins for rent (Grayton Beach State Park).
Think about what you and your wedding guests will do other than attend the wedding. Check out the areas over the internet, and then make your decision as to where it will be held.

Panama city has some really nice beaches and hotels for weddings. Destin has some too. good luck.

if you want north go with the other people and choose destin, beautiful area.
I got married at the Don Cesar in St Pete (the big pink hotel) on the beach and it was exactly what i wanted

Fort Walton Beach, Florida (right next to Destin) has white beaches and clear water~ no seaweed.. no trash.. it was beautiful!!
