find calorie/fitness calculator on the net, enter all your stats and it will tell you how many calories you need a day to maintain, take off 300-400cal off that number and thats how much you need to lose.

have complex carbs for breakfast - they give you energy
have lean meat (protein) for dinner - repairs muscle
cardio exercise 4-6 times a week for 30-50min, light weight training
dont consume foods that are made of white flour (white bread, cakes, past etc.), sugar loaded foods (cookies, icecream, candy etc) and nothing fried, oily.

Good Question, and getting on the health kick is important for hispanic, I most likely do not have to tell you that the Diabetes rate among Hispanics is nearly 100%. So getting into good habits now is very important.
A good healthy diet is a diet of moderation, so while its ok to have fried foods and carbs, they should only be in moderation. You will have to limit things like Rice and pasta. No more then 1Cup at meal time.
Best idea is to go to the American Diabetes Assocaition weg site and learn how to eat healthy, Healthy eating is not just for diabetics but everyone.
Adding Fresh fruit, salad and veggies to every meal is important. Think of your plate in 4's. 1/4 is for meat, 1/4 is for rice/pasta/potato/beans and 1/2 for Veggies and salad.
Cut out sugary drinks like Soda, Koolaide and fruit jucies and drink, Water should be the main choice as well as milk for the little ones. Pop should be a treat maybe once a week. It is high in calories.
When you fry foods, get a good olive or canola oil, better yet get a spray oil, as that helps cut the amount of oil that you use.
Choose lean meats, that is best.
When shopping stay out of the Aisles, that is were most of the junk food is. Stick to Meat, Produce, Dairy and frozen, only go in the Asle for those items like Oil, Toielt paper etc...
Lastly Get Active, Go for a walk, take the whole family for a 30 minute walk after dinner. A moderatly brisk walk will help everone use up those calories from dinner.

Cut down on the meat, lard, fat and cheese and tortillas. Eat more fresh vegetables. Exercise! Your daughter sounds like she wants to, so encourage her. For you, walking is a good exercise, walk briskly for at least 30 minutes a day. That will be a start.
