SPINACH LASAGNA
3 cups shredded mozzarella cheese
1 15 oz container ricotta cheese
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan cheese
2 teaspoons minced garlic
3 cups marinara-style pasta sauce
9 no-boil lasagna noodles
2 cans (15 ounces) spinach, well drained
1/2 teaspoon black pepper, cracked
pinch of red pepper flakes
Preheat oven to 375° F.
Combine 2 cups of mozzarella cheese, ricotta cheese, Parmesan cheese and garlic, chopped parsley and red and black pepper. Set aside.
In a 9x13 inch baking dish pour 3/4 cup marinara sauce. Place 3 pieces of noboil lasagna on the sauce, covering with another 1/2 cup of the sauce.
Layer with half of the spinach, then a layer spreading half of the cheese mixture over the spinach. Repeat layers. Finish with 3 more lasagna strips and cover with remaining sauce.
Cover with aluminum foil and bake for one hour. Uncover and top with 1 cup mozzarella cheese during last 15 minutes of baking.
Allow to sit 10 minutes before serving.
Serves 8.

For cooked spinach I melt a little butter in a saucepan and then add the spinach leave (baby spinach is best) and a not quite full teaspoon of water, salt and pepper. Cover and cook on a low heat for about 7-10 minutes, stirring occasionally, if it looks like it needs it add a little more water. Basically the leaves should wilt and turn dark green. Although you add a smidgen of fat with the butter this is good as you're keeping all the nurtients of the spinach in.
In a salad I rinse baby spinach leaves and put in a salad bowl then I add bacon (cut into little pieces) and cubes of mango, toasted pine nuts and basil to decorate. Top it off with a simple dressing of olive oil, white vinegar and djion mustard with a little honey.

Spinach Pie
1 bag of spinach, fresh or frozen
4 eggs
Approx 8 1/2 ounces of chedder cheese, grated
Approx 1 heaped table/dessert spoon of dried marjoram
Approx 1 heaped table/dessert spoon of dried parsley
4-5 cloves of garlic, depending on your preference, crushed
Plenty of salt to season
Shortcrust pastry
Boil the spinach until cooked, and drain. Squeeze as much of the water as you can from the spinach using your hands (great for relieving stress) and place in a mixing bowl. Add the remaining ingredients (apart from the pastry!) and mix thoroughly. Put the mixture in an ovenproof dish, and top with the pastry. Cook on a medium temperature until the pastry is golden brown, (for me that's usually about an hour and 1/4)

Boston Market sells a fantastic creamed spinach with cheese that is made about like this:
1# fresh spinach or 2 packages frozen leaf spinach defrosted.
4 T flour
4 T butter or margarine
1/2 c milk
2 ounces soft process cheese or Velveeta or Colby-Jack*
2 ounces Jalapeno or other spiced cheese*
* we have a friend to gives us Figi cheese and sausage assortments for holiday gifts. The small sausage shaped tubes of cheese product work well.
Cook the spinach
Melt the butter in a heavy sauce pan, add the flour and cook to make a white roux. Add milk and stir to smooth. Add and melt in cheeses. Add spinach and stir, adding milk if needed for consistency.

Great Spinach salad:
large bag of fresh spinach tossed with red wine vinegar and a Tablespoon of sugar. Use just enough vinegar to wet the spinach.
In a saute pan warm about 1/4 cup olive oil; when it's hot add chopped cooked bacon and heat up bacon.
Then pour mixture into spinach. Garnish with sliced red onion and or hard boiled egg slices.
Serve immediately!

Greek Spinach Pie.
Line a pie dish with a few sheets of filo pastry, it's very thin so you need to layer it! Filo is in the chillers at all good supermarkets.
Then add a base of cooked spinach and top with sliced tomatoes, a good sprinkle of oregano and a good crumbled up chunk of Feta cheese.
Bake on gas mark 4-5 for 15- 30mins until the cheese is bubbly and browned off.
Serve hot or cold, absolutely delish and a great substitute for quiche with much less fat!

I make some really good spinach dip! It can also double for a creamed spinach side if you like.
frozen spinach (family size, Best Pict brand)
2 packs cream cheese (softened is quicker)
Monterrey Jack cheese
onion powder
salt
Boil spinach w/ salt so the spinach will absorb the flavor
Drain spinach
Over low-med heat, add the cream cheese
Stir in Monterrey Jack cheese and onion powder to taste
May add Parmesean cheese as well. I have an aunt who likes to throw in bacon as well.

my favorites are spinach pie and raw spinach salad.
Raw Spinach salad:
Wash the spinach and dry as well as you can. Tear up into salad size bits.
Toss with chunks of sautéd bacon, raisins and pinenuts. Add some feta cheese, cut into squares.
Dress with modena vinegar, salt, pepper and olive oil.
Spinach Pie:
Take one puff pastry sheet and line a quiche tin with it, prick the base with a fork or knife tip in several places.
Put in the freezer while you prepare the filling.
Wash the spinach thoroughly and strain. Mix 3 eggs, 200ml cream, grated cheese, salt and pepper in a bowl, add the spinach and stir well.
Sauté a sliced onion and add to the above mixture.
Sprinkle the top with lots of grated cheese.
Take the shell out of the freezer, add the contents of the bowl and place in a hot oven for about 20 minutes, or until pastry is cooked.
If you like, you can cover the pie with another sheet of pastry, pinch it in several places to let the steam out and brush with a beaten egg. Bake until top is brown and crisp.

Really simple and quick.
Fry 1 chopped onion with some garlic.
Add some chopped mushrooms and cook till golden brown. Add a little liquid - wine, stock or water.
Put 1 bag of fresh spinach in, gradually and cover with lid till all cooked down. Season to taste.
Cut some roquefort cheese (or use Philadelphia with garlic and herbs) or other soft cheese, into chunks and drop onto cooked spinach in pan. Cover with lid till melted. V tasty!

I have one Indian style to make spinach :)
First of all take spinach and if it is bitter, you'd better boil it for awile so that it will change its colour (become more dark green colour). The water, you may leave, because it contains vitamins too... you may put there potato, carrot boil and then put pasta or rice, plus spices to taste. You will get a nice vegeterian soup that it too good for the stomach!
Now as for the spinach (or in Hindi, they call it palak):
Take your spinach and blend it till the paste condition.
Separetely blend 1 big onion alltogether with 2 cloves of garlin and 1 inch of ginger;
blend also 2 medium tomatoes.
Now start cooking, put your frying pan on the medium fire, add some oil (2-3 tb.spoons will be enough).
When it will become hot add the onion-garlic-ginger paste into it and fry it for about 4 mins.
Then add tomatoes and again cook for 4 mins.
Afterwards, add paste of spinach and again cook for 4 mins.
Now, add half glass of milk into your dish and again cook for awhile.
Then, put spices - salk, red papper (if you have indian spice - garam masala, then add it little bit too). And again cook for several minutes.
In truth, your spinach paste is ready, but to make it even more tasty you can add there sweet corn, or half fried pieces of chicken.
You can eat this spinach with macaronies or potato, depends on your taste. But it is very healthy and good for stomach!
