Of course we're counting... it's called 'statistics'...
the answer to the question is that: go to the internet site of the Republic of Turkey, Ministry of Culture and Tourism, which is www.kultur.gov.tr. The web site gives service in 11 different languages, so you might choose any language you prefer.
I checked the turkish version. And i was able to see a huge variety of statistics regarding foreign tourists visiting Turkey (including their nationalities etc). So, from the nationalities (by choosing muslim nations), you can reach a rough figure. The latest data is 2005 though.

According to Samanyolu Haber, in 2005 212000, in 2006 258000 muslim tourists landed to Istanbul. (There is an another international airport in Ankara. They only mentioned about Istanbul.)
