I'd let her take a piece of 'underwear' in ... perhaps one of her daddy's tee shirts, though, if he wears them 'under' his dress shirts to work. Also give her an 'umbrella' (and tell her that it is also called a 'bumbershoot' so she can 'show off' a bit) and some 'underarm deodorant,' or perhaps you could do a 'search' and find a flower with the LATIN NAME beginning with the letter U that you could buy or pick and tell her how to 'pronounce' the Latin name, and also the 'regular name' of that flower. U is a 'very difficult letter' for me, and I'm 56 ... so her choosing 'underwear' is probably just 'good thinking' on her part, since it's 'normal' and it does start with the letter U.

She could Unfasten snaps or velcro on her shoes?
a Uniform

You have had some good answers. Utensils would be real easy to do. You probably have an umbrella around the house that she could take in. Does she have a toy unicorn; a lot of little girls do?
She is hilarious. It would be so funny if she brought in underwear.

can she bring pictures of things that start with U??
umbrella
ukelele
Underwear is cute- there is actually a very funny book my children liked when they were little called underwear. (Maybe you could hop over to the library and see if they have it- the title starts with U)
a picture of an umpire or if you know anyone that plays baseball, an umpires mask
I will add more if I think of anything else

If she has two things to show, she could then point to herself and say, "Me! I'm unique."
Or if you have any dentures lying about, she could bring them and say, "These are my grandpa's uppers." (Ugh!)
Good luck -- do all the kids have to do this, or did you just get (un)lucky with the letter U?
