Sure can. I do it all the time. Put the potatoes in, cover with water and bring to a boil. Remove when done. I have a glass topped stove which I hate to clean all the time is the reason I use the skillet. Washing the skillet is alot easier.

probably, but I would cut them up pretty small. If you want to make mashed potatoes you could microwave them
