Here's a modern spin on Depression Eggs (born of necessity during the Great Depression, when eggs were among things rationed and had to be "stretched" to feed larger families).
For every two servings...
3 eggs
1/4 - 1/2 cup leftover rice (Chinese take-out ROCKS, as does leftover homemade red saffron brown rice)
Generous sprinkling of cheese (I use blend of cheddar, Monterrey Jack and a tiny bit of whole-milk mozzarella)
1 Tablespoon milk (whole), half & half or cream
Touch of olive oil or butter for the pan
Combine all ingredients except the cheese.
Whip the fool out of the mixture (I use a Braun handheld mixer, but a blender, mixer or food processor will work).
Place a splash of oil or bit of butter in a pan; heat over medium heat. Pour in the blended ingredients.
Using a spatula (I use plastic since my pan is nonstick), keep the mixture moving, scraping the sides and bottom of pan.
Once the consistency has noticeably changed from its initial runny, fluidic state, toss in the cheese -- this is the perfect time to toss bread into the toaster).
Keep things moving with the spatula and shake on some salt and pepper onto it then stir in. Continue to cook until desired doneness. Me, I prefer well-done scrambled eggs!
For a bit of a kick, add Harry & David brand hot smoky pepper and onion relish -- awesome!

Well you asked for simple:
Strata
all you need is a deep baking pan, eggs, milk, cheese and a loaf of bread. It's kinda like a quiche but it's a lot less work and comes out every time
Slice the crust off your bread, make a flat layer on the bottom of a greased pan then layer your cheese(whatever kind you want I suggest American or Swiss) then top with another layer of bread. Crack eggs and scramble (how many you need depends on the size of your dish) add milk ( add 1/4 cup per egg) make enough to completely cover eggs and cheese. Cook in a 375 oven till firm.

EGG RECIPE
Eggs Clementine -
Oven broil egg over fried bread
and melted cheese
4 eggs
4 slices bread, fried in butter
1/2 cup shredded Gruyere cheese
1/4 cup dry white wine
salt to taste
Pinch of cayenne pepper
4 tablespoon butter
Arrange the fried bread in an ovenproof serving dish. Melt the cheese in a saucepan with the wine; season it with salt and cayenne pepper. Pour this mixture onto the fried bread. Lightly fry the eggs in hot butter without flipping them, and place each egg on a slice of the fried bread. Put the dish into a preheated 400° F. [200° C.] oven, or under a broiler, for just two minutes to glaze the tops of the eggs

A Frittata is a great way to use eggs! It makes an ideal supper or light lunch. In a large pan fry 1/2 a sliced red onion with 3 sliced mushrooms, 1 cubed cooked potato (Size of a large egg) 1 tablespoon sweetcorn, 2 tbsp chopped ham, 1 deseeded chopped tomato, Until golden
Whisk 3 eggs and season with salt and pepper, pour over the top, sprinkle over 1 heaped tbsp grated cheddar, sprinkle with chopped parsley and chives.
Cook on the hob until the edge looks golden ( Lift with a knife at the edge) Put under the grill untill the cheese is bubbling! and slide onto a plate

On a lazy day I love Sheared eggs. simple and delicious. in an oven proof dish or ramakin butter the sides and bottom.then in the bottom place either some ham, or sausage, or bacon, then crack two eggs on it and place in a 350 degree oven until eggs are as you like them. Remove from the oven and allow to cool a couple minutes then eat.
Another great easy recipe with eggs is to mix in bowl with diced onions and diced ham. pour into non stick pan and cook until firm then place cheese on and place in oven under broiler for 2 minutes remove and plate.

Simplest ever, other than your typical breakfast eggs, is a quiche.
Mix eggs with whatever you like or have on hand, add a little bit of milk and whisk. Pour into a pie plate or baking dish to suit the size of your quiche and bake on 350 for about 30 minutes (less for smaller dishes, more time for larger quiches).
Quick, easy, no set recipe, easy clean up.

Salt, pepper, heavy cream, diced onion, sliced ham and eggs. Nice omelet served on toast. If you wanna get fancy you could also add to the mix: diced fresh tomato, kalamata olives, and feta cheese for a Greek style omelet.
