I am cooking for a date on Saturday and I need some help with finding a recipe. I'll be cooking boneless, skinless chicken breasts but I'm not sure what to cook. Something that is easy, I'm not a talented cook. I was thinking something with pasta? I need some kind of side dish. Also if you have any ideas, something non alcoholic to drink ( I was going to go with white wine but I have to drive home ). Thanks :)

Easy Chicken-Pasta Primavera
Serves: 2

Prep: 10 min
Cook: 10 min

4 ounces uncooked fettuccini pasta
1 cup broccoli flowerets
1/2 cup 1/4 inch strips carrots
1 teaspoon olive or vegetable oil
2 boneless skinless chicken breast halves (about 1/2 pound), cut into 1/2 inch strips
1 clove garlic, finely chopped
1/3 cup ranch salad dressing
2 tablespoons grated Parmesan cheese
1 teaspoon shredded fresh basil or 1/8 teaspoon dried basil

1. Cook fettuccine as directed on package adding broccoli and carrot 1 minute before pasta is done.
2. While fettuccine is cooking, heat oil in 10-inch nonstick skillet over medium-high heat until hot. Sauté chicken and garlic in oil 2 to 3 minutes until chicken is no longer pink in center; remove from heat.
Stir in dressing, cheese and basil.
3. Drain fettuccine and vegetables. Toss fettuccine and vegetables with chicken mixture.

The easiest recipe is to place the chicken into an ungreased rectangular pan, skin sides up (where the skin would be, bone side down) , cover and bake at 375 for 30 minutes. Then remove from the oven. Pour 1 cup of your favourite BBQ sauce, or cooking wine sauce, then bake uncovered for 30 more minutes. It's really simple and super yummy, a family favourite of ours.

Side dish? A salad is great, or steam your date's favourite veggie.

Or chop up your chicken, cook in a pan with a little oil for about 15-20 min, add to a pot of bubbling spaghetti sauce and--voila--Chicken Cacciatore. If you decide to add an onion and a bell pepper (chopped up of course), heat to boiling, then reduce the heat, cover and simmer for 30-40 minutes. Serve over pasta.

Here is a great recipe that is VERY popular with everyone that has tried it! Good Luck and have a wonderful time!

1 Pkg. Boneless chicken breasts
1 jar Hormel dried beef (usually found by the tuna ect.)
1 pkg. bacon
1 can cream mushroom soup
1 can cream chicken soup
1 small - medium container light sour cream
paprika
toothpicks

Preheat oven to 350. Place the dried beef on the bottom of 9 x 13 pan, cover the bottom of the pan. wrap a piece of bacon around chicken and secure with toothpick. Place chicken on top of dried beef. Mix soups and sour cream in a bowl and pour over the chicken. Sprinkle with paprika and bake for approximately 1 hour.

I usually serve it with brown rice and either a nice salad or vegetable. We usually drink wine with this so I don't have any great suggestions for that! Maybe 1 glass of wine and it wouldn't be a problem to drive home? Have fun!

Oven baked 'fried' chicken is always a hit--and so easy.
Chicken, season with salt, pepper, a seasoning salt (lightly) a dash of garlic powder, then dredge in flour, dip in a beaten egg, roll in panko crumbs or my favorite, corn flakes crushed up, put on foil lined cookie sheet a drizzle of oil, pop in oven at 425 for 15 minutes, turn, and bake another 15 minutes until crispy golden brown and juices run clear. YUM

Summertime, have a potato salad and a cuke salad or now, make your pasta with a good quality alfredo sauce over top and some cheese. Serve with a wonderful green salad with all the goodies, if you still need more veggies, how about broccoli or peas and carrots that are glazed in butter and honey and a bit of chopped ginger and for dessert, why not strawberry shortcakes, or hot fudge sundae for two?

No Fuss but great tasting chicken:

Wash you chicken with water first so it is clean.

dip chicken breast in milk
dunk into corn flake crumbs (you can get them at store already made into crumbs.) salt pepper to taste.
put on no stick aluminum foil on a baking pan
place chicken breast on foil and cook till done.Bake at 350
Serve Penne Pasta as a side and
put 1 tsp of olive oil in the water you boil the paste in make it aldante not over cooked.
Use sauce of you choice bottled.

Classic Italian salad includes

Iceberg lettuce
tomatoes
little parsley
salt pepper to taste and here is the secret a little bit of sugar.
To make the salad crispier: Rise lettuce out dry with clean
cotton towel-not the fuzzy kind the plain kind. Then place the salad in bounty wet paper towels it will be crispy and delicious

dressing is 1/3 olive oil to 2/3 apple cider vinegar mix ahead and put it all in just before eating so as not to wilt.

It is fabulous
serve Italian warm bread and butter and you will have another date.

i found a very easy recipe for Chicken Continental and it is very good and filling, that way your date wont leave and stop by a burger joint on the way home.
1/4 cup unsalted butter
6 boneless, skinned chicken breast halves (about 5 oz ea)
3- 10 3/4 oz cans condensed cream of chicken soup-undiluted
3 level tbsp. dried celery flakes
2 level tsp. dried thyme
16 oz package yellow rice, cooked according to package
preheat oven to 350 degrees F. in a large skillet melt butter over medium heat. add chicken and brown on both sides about 6 min. total remove chicken and sit aside. into the drippings in the skilletwhisk soup, celery flakes adn thyme until well blended. heat through. stir in cooked rice. spoon mixture into a 13x9x2 inch baking dish. place chicken on top pushing down into rice mixture until almost covered. cover dishwith foil and bake 30 minutes or until cooked through, remove foil and bake another 10 minutes. let stand about 10 minutes before serving.
* you may have to buy a couple of bags of rice because here they only sell in 6 or 9 ounce bags. i usually get one 6 and one 9

This is an easy, gourmet-style dinner you can use that is not only delicious but pairs easily with any type of pasta, salad or green vegetable. Plus, if you have any left over, it is VERY good the next day!

CHICKEN MEDITERRANEO

4 to 6 skinless boneless chicken breasts
Salt (to taste)
Black pepper (to taste)
Garlic powder (to taste)
Oregano (to taste)
½ cup red wine vinegar
½ cup olive oil
Juice of one small lemon
3 tbsp capers with a bit of juice
1 cup pitted prunes
½ cup green Spanish olives
½ cup black Greek olives
2 bay leaves, torn into pieces
¼ cup brown sugar (packed)
¼ cup white wine (very dry)
¼ cup cilantro, finely chopped

Start preparations the night before. Season chicken breasts on both sides with salt, pepper, garlic powder and oregano. Place in a large bowl and squeeze lemon over all. Add oil, vinegar, capers and juice, prunes, olives and bay leaves. Cover and let marinate in the refrigerator overnight (this is essential).

Next day, preheat oven to 350 degrees. Arrange chicken in a single layer in a shallow, long baking pan and spoon marinade over it evenly, scraping the bowl to get every bit. Sprinkle cilantro and brown sugar evenly over chicken and pour white wine around them.

Bake for 50-60 minutes, basting frequently with pan juices. Serve with plain noodles or rice. Have lots of bread handy for sopping up the juices.

My favorite, go to, easy chicken recepie is always Chicken Piccata.

Its super simple, you serve it with angel hair pasta...and its always a crowd pleaser, and your guests are always impressed because it looks and tastes gourmet!!!

Theres always a million recepies on the internet...here is one ive tried and love,

Chicken Piccata
This lemony chicken dish is a quick and easy way to give your family a nice treat on a weeknight. Team it up with some broccoli sautéed in oil and garlic as a side dish.

Serves 4

4 chicken breasts pounded thin
flour spread on a plate for dredging
2 tablespoons of olive oil
3 tablespoons of butter
1/2 cup of white wine
juice of 2 lemons
salt and pepper to taste
1 cup chicken broth

1. Dredge each chicken breast in flour to coat and shake off excess.
2. Heat oil in a large saute pan set on medium heat.
3. Place chicken breasts in pan and cook until lightly browned on both sides, about 2-3 minutes for each side.
4. Drain the oil and add butter, wine, lemon, salt and pepper. Cook for 1 minute.
5. Add the broth and cook until the liquid is reduced by half, 5 to 6 minutes(sprinkle a little flour in when it starts boiling to thicken.)
6. Transfer Chicken to serving dishes, top with sauce and a slice of lemon for garnish.

Make alfredo chicken. bake the chicken in alfredo sauce, but check it because chicken can over cook fast and nobody wants rubber chicken, once the food is almost done put italian bread crumbs on top and bake it until they are brown. then make a green bean casarole. its so easy and the recipie is on the campbells can
