i make spanish rice alot but for some reason when my cousin makes it hers comes out hard & im not sure whyy.. i follow the boc & my comes out nice & cooked & soft. She follows the box & it comes out to hard-like. What should i tell her to do? is she cooking it to much or something? help lol

she might not be putting enough water. Here is a good recipe for her to do:

Spanish Rice

INGREDIENTS
2 tablespoons vegetable oil
1 cup uncooked white rice
1 onion, chopped
1/2 green bell pepper, chopped
2 cups water
1 (10 ounce) can diced tomatoes and green chiles
2 teaspoons chili powder, or to taste
1 teaspoon salt
DIRECTIONS
Heat oil in a deep skillet over medium heat. Saute rice, onion, and bell pepper until rice is browned and onions are tender.
Stir in water and tomatoes. Season with chili powder and salt. Cover, and simmer for 30 minutes, or until rice is cooked and liquid is absorbed.

I'm a Cajun from south Louisiana and rice is as commonplace on the dinner tables here as it is in China. No matter what ingredients you add to rice, the amount of rice and the amount of liquid used ALWAYS follows this simple rule.
1.Always use twice as much water or liquid as rice. Two cups of water one cup of rice.

2.Always bring liquid to a boil before adding rice.

3.Add rice and then let it return to full boil.

4.Cover and cook on lowest temp. for 20 minutes without lifting cover.

Regardless of what you are adding to the rice, this formula NEVER changes.

She is either not using the right amount of liquid or she is cooking it over too high a fire.

If you are sauteing your rice in butter or oil first it ts the outside of the kernal not letting the liquid break it down fully. It is a 2 /1 ratio when cooking rice, 3/1 on wild rice.

Sounds like she need a little more water, Or if the rice is hard it needs cooking longer, plus the water.

You are either cooking it too high, or too long. You have to turn the heat down after you add the rice to the water, and watch it to make sure it cooks proper.

I think she's not reading the amount of water right, or maybe she is but there's still not enough water when she makes it.
