it's hot out and i don't want to fire up the oven, it's also ready to storm so grilling is out. i need something that kids are going to eat and isn't just a pbj.

Hmm, how about some quesadillas?
Those are easy and kids love them. Plus you can even add some beef, chicken or whatever you want in it along with the cheese and tortilla of your choice. Maybe some spaghetti. Just boil up some pasta noodles, heat up some sauce. And if you want, add some ground beef, tomatoes, mushrooms, olives, onions or whatever to make it even better :]
Pour the sauce over the noodles and serve!
You could whip up some soup. I`m sure you have a can of soup lying around. Heat some up for the kids and serve with a grilled cheese sandwich. Or even if you have some meals in the freezer like pizza, make that! Kids love pizza.
Or if you have nothing really to eat, order some pizza from pizza hut or other local pizza providers! You can NEVER go wrong with pizza :]

If you like hamburgers I have a great recipe. Hidden Valley Ranch makes a seasoning mix in the packet or a plastic container (it's on the isle with the salad dressings). Mix a generous amount of the seasoning with your hamburger meat and pan fry or grill. The only thing else you need is a grilled bun, swiss or american cheese, lettuce & tomatoes and you're done. You don't need any additional seasoning and they are fabulous.

Make chicken salad sandwiches
INGREDIENTS
6 boneless chicken breast halves, cooked and diced
1 cup chopped celery
1 teaspoon salt-free herb and spice blend
1 cup mayonnaise
DIRECTIONS
Combine the chicken, celery, spice blend and mayonnaise. Mix all together; more or less mayonnaise can be added, depending on your preference. Voila, your summer salad is ready to serve!



Cold Spaghetti Salad
INGREDIENTS
1 pound thin spaghetti
1 (8 ounce) bottle Italian salad dressing
1/4 cup red wine vinegar
1 small red onion, chopped
1 (8 ounce) package pepperoni sausage, chopped
1 (4 ounce) jar sliced mushrooms
1 (16 ounce) can Italian-style diced tomatoes, drained
1 (3 ounce) jar sliced green olives, drained
1/4 (2.62 ounce) bottle salad seasoning mix
2 cups shredded Parmesan cheese
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and place in a serving bowl.
Pour the salad dressing and vinegar over the noodles, and mix well. Add the onion, pepperoni, mushrooms, tomatoes, olives, seasoning mix, and parmesan cheese and stir until well combined. Serve at room temperature, or cover and refrigerate for several hours, or overnight.

My kids love this....in fact everyone I have ever made it for loves it. Get some boneless porkchops...frozen is fine...put them in the bottom of a baking dish. Take 1 can of cream of mushroom soup...one pack of onion soup mix and one can of water and put over the top of your pork chops. Pop in the oven...(if you buy breakfast chops it will take less time to cook)...but anyway set your oven to about 400 degrees and cook for about 30 minutes or til golden brown (thats not long in the oven)...but you can do the same thing on the stove top covered. In the mean time, cook you some 10 minute boil in bag rice. When its all done you have a wonderful hot meal...baked chops/gravy over rice. My VERY picky kids who generally only like chicken nuggets love em'.

Since the weather sounds horrible ... maybe do something fun and out of the norm .... I am sure the kids would love it ... I always did when my mom did this when I was growing up ..

You could make breakfast food for dinner.

Like Pancakes and eggs ....

Or Eggs and Potatoes

Or Egg Sandwiches & hashbrowns

Or something different like that ....

It was always fun when we got to do that - it was only a few times the entire time I was growing up - but it sure was different.

Cook some rice. Throw in whatever leftovers you have like ham, taco meat, peas, etc add some butter to a skillet and heat up, then add 3-4 scrambled eggs a dash of soy sauce and cook until set. My kids love it

This is my recipe of vegetable stir fry
( u can also add meat in it)
ingredients - some vegetables like onion tomato capsicum , asparagus , some greens spinach bean sprout etc. (any vegetable u like).

method-put some butter in a pan and let it melt. then add the vegetables with some garlic or ginger.then add flavourings like salt , pepper, vinegar, soya sauce , fish sauce , stir fry sauce any thing.and voila ur simple vegetable stir fry is ready

serve it hot with some steaming rice or on top of noodles or with a crunchy peice of bread

Chicken Breasts with Spicy Honey Orange Glaze

Makes: 4 | | Ready In: < 30 minutes

Ingredients:
1/4 cup honey
2 tablespoons frozen orange juice concentrate
1 teaspoon grated orange zest
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
4 boneless, skinless chicken breast halves
1 tablespoon margarine
1/2 teaspoon vegetable oil


Directions:
In small bowl, combine honey with juice concentrate, orange zest, garlic, salt and red pepper flakes. Rinse chicken with cold water and pat dry.

Season lightly with salt. In large non-stick skillet, heat margarine and oil over medium-high heat. Add chicken and cook about 4 minutes, until seared.

Turn chicken, cook another 4 minutes until just cooked through. Pour honey mixture over chicken and cook, turning chicken to coat as sauce begins to thicken, about 2 min. Serve chicken breasts with honey-orange glaze spooned over the top.

Ham and Brocolli roll ups: Can of cheddar cheese soup, sliced Ham in package by saussages 5$, brocolli with long stems frozen. roll up steamed brocoli in ham. about 12 of them bake or microwave till hot 3min micro or 15-20 bake. Warm soup with 1/2 cup milk--pour over roll up! Serve with applesauce. 15min. meal You can suffer that!
