Celestine V - he was a holy hermit that they decided to make a Pope. Well they made him one, and he still felt most comfortable in very humble surroundings. So he slept still in a kind of a shack at the Vatican. When he began to speak of giving away the riches, he was driven off.

Personally, I like Pope St. Gregory the Great from before the Schism (conversely, Pope Nicholas II is one of my least favorites for how he tried to grab power in the ninth century).
