Some form of garlic.... a pepper, garlic and salt mix works. Straight garlic powder or salt tastes like it is artificial.
With these things you can make most anything. But here is the thing. If you are into cooking you can modify most anything. Buy packets of basic brown sauce or peppercorn sauce for example. You can add a bit of wine or mushrooms. Knoor is the best. You could get whatever hollandaise add a bit of wine and lemon juice..... good for any meat.
Yes if you get into cooking you shall have every spice. But at first think about using basics. A good cook can use everything in the cabinet and come up with something great as opposed to those who have to follow a recipe.

Other than the basic salt and pepper, garlic powder is a must as well as Rosemary, Tyhme, Basil, Paprika, Onion Powder, Red Pepper flakes, Oregano, tarragon, sage. Fresh herbs are the greatest when seasoning beef and chicken and an good extra virgin olive oil adds flavor to many things.

These are the spices and herbs I most often use and think they would be good additions to your spice rack: dried thyme, dried rosemary, dried basil, dried oregano, red pepper flakes, ground cumin, chili powder, onion powder, garlic powder, ground cinnamon, poultry seasoning, bay leaves, paprika, seasoning salt, and of course salt and pepper. Kosher salt, cracked pepper, dried orageno, garlic powder, onion powder, cinnamin,fresh nutmeg, pepper flakes. Tese are just the basics. It will grow as your skills grow. Remember to toss out after about 6 months. They lose their taste

i keep salt, ground pepper, garlic salt & powder, onion powder, basil, cilantro, oregano, parsley, rosemary, allspice, celery seed, chilli powder, coriander, nutmeg, cinnamon, mustard seed, dried mustard, paprika, minced garlic and whole garlic cloves.
i have 2 different spice racks cause i keep so many. hope this helps!
