I really like the cakes that are pretty simply decorated, my favorite is a plain cake frosted w/ normal icing (any color) w/ colored circles and dots of varying sizes done w/ a gel or royal icing in a complementary color to the base frosting. Simple but looks nice and festive.

Take a coloring book picture . Tape the picture onto a flat surface like a cookie sheet. Tape a piece of wax paper over the picture. Mix frosting with food coloring to make the colors you need to "color" picture. Use a decorating bag with a line tip. Outline the picture with black frosting or desired color. Fill in the rest of the picture with different colors. Place in the freezer after frozen trim wax paper close to picture place the frozen piece icing side down on frosted cake. Carefully peel off the wax paper work quickly frosting must still be frozen when you remove the wax paper or you'll destroy the image.

The family fun magazine always has great ideas for cakes that are so unusual - castles, pirate ships, etc.
