Sugar free pudding cups. Some types of hearty fruits or vegetables, as long as you don't keep them smooshed in a plastic bag. Jerky of all types. Trail mix, granola bars, that sort of thing.
As far as a "supper" type application, consider some type of pickled salad, a meddley of various pickled vegetables and fruits. The pickling process will keep the salad safe to eat.

Get some Hongkong style buns. Usually they stay fresh for a whole day. They come in many different tastes; With meat or without meat; sweet or salty..... So you don't have to eat the same thing for every meal in a day.

apple sauce cups, nuts, healthy crackers, fruit. I'd stay away from dairy products like yogurt or hard boiled eggs.... those items need to be refrigerated.
