That's a tough question because the first modification Nascar allowed was racing tires (for safety) back in the late 50's.
In the 60's they were using modified production car's. Modified as in bigger brakes from trucks etc. since nobody was making racing stuff yet.
They were still using production sheet metal, albeit modified, on purpose built chassis through the late 80's like the Monte SS's and Buick Regal's and T-Bird's etc.
Once they started using FWD car bodies in the 90's like the Lumina the only thing stock was the hood, trunk and glass.

The Detroit Iron was used until the late 60's and early 70's.Banjo Mathews was one of the first to construct a car out of "sheet" metal in a race shop.This became a win-win for Detroit and NASCAR.Detroit furnished a hood-roof and rear deck,everything else was made in the teams shops by the teams with "NASCAR" approved equipment. In the 80's when a few teams began building their own frames,but still using the factory hood-roof-deck. Whit the cars changing in detroit NASCAR approved using shop made roofs and decks,here some teams changed geometry and got a slight advantage.Until NASCAR got strick with templates.The "Factory hood" in theory kept the front of the car to spec.But about 5 years ago the hoods were also being made in shops. The only stock itemd from Detroit now is the name(CHEVY_FORD_DODGE) and even those stickers are not made in Detroit.

The answer to this question would be the 1960's. When the teams started building their own "racing only" cars, the days of "renting" a car from a local dealer, or racing the car that you drove to the track were over. Like Harry Hogge (Robert Duvall's character in "Days of Thunder" ) said "there's nothing stock about a stock car".

NASCAR has never really ever used stack cars at all, The only thing that it means is that in appearance that they resemble the auto they are supposed to look like, nothing more.

If you mean when they went a bought a car from the dealer and raced it? I dont know why people get so hung up on this... Drivers would die every week from crashes if they did that.

never, ever, ever, even back when they raced on the beach at Dayton there were engine mods suspension mods, and structural mods, they never raced in a factory bought stock car
