Thick Potato and Bacon Soup:

6 servings
2 slices streaky bacon
1 ounce butter
1 lb potatoes
1 lb onions
1 pint chicken stock
1 teaspoon salt
1 teaspoon pepper
1. Peel and cut potatoes and onions coarsely.
2. Chop Bacon and fry.
3. In a stock pot/soup pan add potatoes, onions and butter and slowly cook with a lid on until they start to go soft.
4. Add bacon, stock and season with salt and pepper.
5. Cook for approximately 25 minutes.
6. Once cooked use a blender until the soup takes on a relatively smooth consistancy.

Here is an easy POTATO SOUP INGREDIENTS 4 potatoes - peeled and cubed 3 stalks celery, chopped 2 teaspoons dried onion flakes 2 quarts water 2 cups milk 1/2 cup unsalted butter 1 cup potato flakes salt and pepper to taste DIRECTIONS In a large pot over high heat, combine the potatoes, celery and onion with the water and bring to a boil. Reduce heat to low and simmer for 20 minutes. Drain the water, reserving 2 cups of water in the pot. Add the milk, butter and potato flakes. Stir all together well until thickened, about 5 minutes. Season with salt and pepper to taste. I pre-cook my veggies in a glass pie plate in the microwave to get the soup ready quicker.(optional suggestion) The added Potato flakes will thicken the soup

6 Yukon Gold Potatoes
2 large leeks (white part only)
1 box Organic Chicken Broth
1 cup sour cream
1 cup sharp cheddar cheese
1 T kosher salt
1 tsp fresh ground pepper
Cook leeks and potatos in chicken broth until fork tender. Add salt and pepper. Remove half of the mixture and puree in a blender. Return to remaining mixture. Add sour cream and cheddar cheese and heat thru. Season to taste. Crumbled bacon also tastes great in this soup as well as scallions or chives.

Find a good soup recipie and follow it. Then take two table spoons of corn starch and add a little water to it. Make it look like milk. Then pour it in soup and let it simmer. You will see it start to thicken. Add a little more till you get the desired thickness.

simmer 1 pound of potatoes in 6 cups of chicken broth. When the spuds are fully cooked, puree them in a food processor. THen place the mixture back on teh stove and add 1/2 cup of green onions, salt and pepper to taste, and 2 cups of heavy cream

Build a vegetable stock with fennel, celery, carrot, onion, garlic, salt and pepper.
Wash and peel you potato, boil in vegetable stock with leaks until the potato is tender, but not soft. pull some potatos out, leave some in to puree, quarter the potatos you pulled out.
While still hot add leftover mashed potatos, cream and cheese. add in your quartered potatos and eat!
using leftover mashed potatos helps to thicken up just about any soup.

i think at times is would be best to saute the different veg. that you seem to like such as onions, celery, carrots, garlic i actually like leeks in mine (make sure cleaned well) add the potatoes and stir well i then add about 4 cans of veg. broth and a few veg. bouillon cube for added richness. you can add things like pepper or dill to taste. i then like to make a roux in a separate pan with marg. or butter a few table spoons and a few table spoons of flour and stir until mixed. then i slowly add 1/2 and 1/2 to roux and keep stirring. then i add the roux to the soup. i am sure the roux can be made with soy milk. stir the soup and cook slowly until pot. are cooked. perhaps add cheese at the end if you like or even i have had it with spaetzel in it.

keep the water that you boiled the potatoes in, in the pan, then add you milk, you can add a bit of flour mixed with milk to thicken it,
when doing the potaoes(boiling them) I add drop noodles to mine with a bit of onion, gives a great taste,
just make a mixture of flour, eggs and a pinch of salt, then drop by spoonfulls into the boiling water for the noodles,
also add a couple pats of butter to your soup when its almost done.
