I think, but I may be wrong, that green olives come in a jar because they are usually pickled with an acid( like vinegar), and acid put in a can sometimes causes a reaction which can alter the flavor. Since black olives are not pickled, they can be put in a can without altering the flavor...

Marsha L is right, it has to do with the acid (vinegar) in the process. When's the last time you saw a can of pickles, or peppers, or anything "pickled"? The acid will react with the can and spoil the food in it. Tomatoes are the only exception; while they are mildly acidic it is so little acid that the white coating on the inside of the can is sufficient to contain the reaction.

black olives and green come in all diff containers i know that even in restaurants they can both come in a bag i guess also if they are in a can a nd a jar they are better to tell them apart

People do want to see how green and fresh those olives are when they're green, but if they're black, there is no point of checking how black they are.

Good question. Buy them all the time but never thought about it. I think that they are black may be one reason as as already been noted. Also they can be much larger and may be cheaper to pack in tins. Guess only a grower or food commodity broker could tell you. It might be just "one of those things?"

because, green olives are spanish or whatever there other name is , and black olives keep long in a can, because they dont have a pit, i dont freaking kno i just eat them,
