Sounds like a fine little fellow.
It may be beyond his understanding. Pointing to God as having a beginning, can't be done since he IS the beginning.
Perhaps you could use the ocean. It is in all parts of the world, and on it, you can go almost anywhere, so in effect, it has no beginning or end since the world is round.
We have a book, "What Young people ask"
You can call any Kingdom Hall and have one sent out to you, no charge. You might also ask for the Bible stories book, also at no charge. Or ask them on the website to send them to you. (Also, at no charge)

God is and always has been. Hard to explain this to an adult, but a child migh accept it more readily.. or not!
My understanding is that God is "outside of time"; God is past, present, and future. God is everywhere at all times.
God IS
If you enjoy philosophy and theology, Thomas Aquinas writes some great stuff about God as esse. He writes that God is pure act, while humans are potential.
for example, humans have the potential to love. God IS love. We have the potential to speak many languages; God IS speach and the word.

I agree, that the question demonstrates a good mind for a 7 year old. I think it's ok to tell kids that you don't know the answer but you do believe in God. It's a good way to teach a lesson about faith, I think by the question that he shows he old enough to understand the concept.

Your a Catholic.. so I can tell already your son will grow up blinded by the Mass's teachings...
You should bring your son to a good Baptist or Pentecostal some morning... and he will hear the truth about our Creator..
You might think im sectarian but i'm far from that.. but what the catholics are brought up to believe in is not so... at all.

God is our Creator. And after we accept His Son Jesus as our personal savior, and live according to His word in the Bible, when we get to Heaven, there will be things told to us there that were not available to us here.
Proverbs 3:5 Trust in the LORD with all thine heart; and lean not unto thine own understanding.
Hebrews 11:1 Now faith is the substance of things hoped for, the evidence of things not seen.
Trusting in God and having total and complete faith in Him without needing proof of His existance or how He came about, is what real faith in God truly is.
Get yourself a KJV Bible and start to read it with your son. God will open it up to you and help you raise your son according to His Word, which is the truth.

I would simply tell him the truth. Then, I would pray and ask God to continue to reveal himself to your son. The only true comforts in life, come from Him.
From God's Word, "I Am." God created time. Before time began, things simply existed.

Simple logic indicates that something finite (of this creation) can never come from nothing. Even a child understands that.
You see that God is not part of the creation (viz. is not finite), but is above the creation thus is infinite, eternal and unchangable.
The simple answer is that God does not have a beginning and therefore was not created.

Welp in your faith no one made God. God just always was. That's what makes him God. I know that's confusing to a little kid. But peraps you can tell him God made himself. That one sort of worked for me for a while when I was Christian.

God is.
I am who am.
Eternity and existence can be very hard for a child to understand.
