Also how long does the started last since the instructions says not to put it in the fridge? Is there any reason why we have to wait 10 days before we bake it? Some days we are to knead the dough and other days we add ingredients.

Amish Friendship Starter


INGREDIENTS
1 (.25 ounce) package active dry yeast
1/4 cup warm water (110 degrees F/45 degrees C)
3 cups all-purpose flour, divided
3 cups white sugar, divided
3 cups milk

DIRECTIONS
In a small bowl, dissolve yeast in water. Let stand 10 minutes. In a 2 quart container glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly or flour will lump when milk is added. Slowly stir in 1 cup milk and dissolved yeast mixture. Cover loosely and let stand until bubbly. Consider this day 1 of the 10 day cycle. Leave loosely covered at room temperature.
On days 2 thru 4; stir starter with a spoon. Day 5; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Days 6 thru 9; stir only.
Day 10; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Remove 1 cup to make your first bread, give 2 cups to friends along with this recipe, and your favorite Amish Bread recipe. Store the remaining 1 cup starter in a container in the refrigerator, or begin the 10 day process over again (beginning with step 2).

Once you have made the starter, you will consider it Day One, and thus ignore step 1 in this recipe and proceed with step 2. You can also freeze this starter in 1 cup measures for later use. Frozen starter will take at least 3 hours at room temperature to thaw before using

Friendship Bread Starter

Ingredients for Starter:

1 package active dry yeast
1 C. cup milk
1 C. flour
1 C. sugar

Procedure to make Starter:

Note: DO NOT use metal bowls or spoons and DO NOT refrigerate.

Dissolve yeast in small amount of warm water. Mix all ingredients together in an ample sized bowl or jar (it WILL grow). This is Day 1 of the starter.

Day 1: Mix starter ingredients in bag or nonmetal container and set aside. (For smoother batter, mix flour and sugar together, then add milk.)

Days 2-4: Stir or squeeze bag.

Day 5: Add 1 cup flour, 1 cup sugar and 1 cup milk.

Days 6-9: Stir or squeeze bag.

Day 10: Add 1 cup flour, 1 cup sugar and 1 cup milk. Then put 1 cup starter mixture into each of three containers. Keep one to start over with (can be frozen) and give two away with instructions.

Note:

When giving starter away, only half fill the container and provide for some ventilation (ie. small hole in top of jar). The starter does expand and unless the gases caused by the fermenting process are allowed to escape, they will build up and could cause the lid of the container to pop off.

Store the remaining starter in a container in the refrigerator and begin the 10 day process over again when ready. You can also freeze this starter in 1 cup measures for later use. Frozen starter will take at least 3 hours at room temperature to thaw before using.

Here's a wonderful recipe to use the starter with:

Lemon Poppy Seed Amish Friendship Bread

It's versatile enough to make muffins, too. Just add 3 tablespoons of the batter into greased muffin tins and reduce the baking time to 23-25 minutes."

INGREDIENTS

2 cups all-purpose flour
1 cup white sugar
1&1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 cup poppy seeds
2 (3 ounce) packages instant lemon pudding mix
1 cup Amish Friendship Bread Starter
2 eggs
1/2 cup milk
1/2 cup applesauce
2 teaspoons vanilla extract
1/2 cup vegetable oil

DIRECTIONS
In a large mixing bowl blend together the flour, sugar, baking powder, baking soda, salt, cinnamon, poppy seeds, and lemon pudding mix. Make a well in the center of the bowl.

In a separate bowl, mix together the Amish starter, eggs, milk, applesauce, vanilla, and vegetable oil. Add to dry ingredients and blend until just combined. Pour batter into 2 greased loaf pans.

Bake in a preheated 325 degree F oven for one hour. Cool for 10 minutes on a wire rack. Remove bread from pan.

plastic container. Stir in remaining warm water, flour and sugar.
Beat until smooth. Cover with loose fitting cover. DO NOT
REFRIGERATE! The starter requires 10 days for fermentation as follows:

DAYS 1, 2, 3 and 4:... Stir batter DAY 5:................ Add 1 cup
each milk, flour, sugar and stir DAYS 6, 7, and 8:..... Stir batter
each day DAY 10: ............. Add 1 cup each flour, sugar, milk;
stir.

The batter is ready to use.

This makes 3 cups batter to use in the recipes. If you want to you
may pour 1 cup batter each into 3 containers and give 1 or 2 away.

Save 1 cup to begin process all over again OR you can use all 3 cups
batter for the recipes at 1 time and when you want to bake these
again just start the starter again.

Days 6, 7, 8, 9: Stir with wood or plastic spoon until comfortable. do this as quickly as every day. Day 10: Repeat.
