There are few games out for the PS3 that aren't XBOX360 directports (with the same graphics, not upgraded for the PS3) yet. Check out Resistance: Fall of mankind for a very small dose of what the PS3 is capable of. Which is a bit more than the XBOX360 can tout considering the graphics, framerate and playability.
Or.. you can go get an XBOX360 and join the masses of people that will wish, in less than a year, that they had stuck it out and waited.
I have both and think the PS3 is much more advanced.. but the price is the real liability.
Check out the link below for some more games for the PS3. Compare the graphics yourself.. there's not much to compare though.

I would recommend Resistance: Fall of Man
also, the PS3 madden games have great depth. many modes. like career and franchise that stuff.
Tom Clancy's Endworld is coming out in 2008 looks really cool.
