Horses have different digestive systems than humans. They break food down differently. Plus, horse oats usually have additives that make it sweet, that's why it's sticky. And that's why you use it to help them gain weight. Also, as someone mentioned previously, they'll keep eating until there's no food. So the more you give, the more they eat.
Anything in excess will cause you to gain weight. Eating proper portions of oatmeal is good since it's a great source of fiber. It will fill you up and keep you full for a while. Add some fresh berries to sweeten it up.

Because oatmeal is fiber dense and low in calories and has no fat at all.
Also, oatmeal is difficult to eat in large quantities if you are a human. Most people can wolf down 7 or 8 spareribs, but nobody normally can eat 4 or 5 bowls of oatmeal.
I have 1 tiny bowl and am pretty much done with oatmeal for the day, if not for the week!

Because animals and humans have a different metabolism. In other words, they process food differently. Besides, when people eat oatmeal, they usually pile on sugar, cream or milk, and some even add a bit of butter or raisins or dates. These additives, while they make the oatmeal taste better, they do add on calories.
Oatmeal is an excellent source of fiber, and it is also said to help reduce cholesterol. It is a good food for human consumption, as well as for horses, but reacts much differently in their systems. Cows get fat on grass, but that doesn't mean we would; that is if we could get it down. Ugh!

Well, if you overeat anything, oatmeal included, you'll gain weight.
Oatmeal is very high in fiber, so eating a "normal" portion will make you feel full and keep you feeling full for a long time. (Oatmeal is really good for you, by the way.) That just makes it harder to overeat (as opposed to, say a candy bar, which is mostly sugar, and doesn't make you feel full).
I don't know a lot about horses, but I do believe that they can actually overeat and kill themselves. So my guess is that horses must not have a good (or any) sense of fullness.

Anything is fattening if you eat enough of it and if you putz with it enough, like adding butter and sugar, etc.
