I love getting letters from my kids when they are saying thank you! Try to tell her what specifically you are thankful for. Extra time she has spent, sacrifices she may have made to get you extra help, her smile, whatever has really helped you.
What a great student you are for being kind enough to write her a note!

You write what you really feel. Teachers know when what you write comes from your heart (and when it doesn't). Once a student wrote to me to tell me how wonderful my class was (but he never showed interest in class). Perhaps that was him looking excited, but it was hard for me to take to heart.
When I receive notes from students I love to hear the specifics. Was there a lesson or project you particularly enjoyed? Perhaps you had a conversation together that made you feel good. Let your teacher know WHY you appreciate him/her, not just that you do.

Yes,you can write that. Tell her why. though. Has she made subjects interesting? Has she helped you to understand something? Has she made your life fun? Has she been easy to talk to? I've been teaching for 30 years, and I still have letters from appreciative students I taught years ago.
