This is the best tasting fudge I have ever had. Creamy and fudgey!!
4 cups sugar
1 cup milk
1 tsp. vanilla
1 cup butter
1 and 1 half cup mini marshmallows
12 oz. chocolate stars candy or 12 oz. plain Hershey chocolate bars
12 oz. milk chocolate chips
2 oz. Bakers unsweetened chocolate
1 cup chopped nuts , if desired
Mix sugar, milk and vanilla in a saucepan. Add butter and bring mixture to a boil. Let boil for 2 minutes. Remove from heat and add marshmallows. Then add chocolate a little at a time, stirring thoroughly after each addition. Add nuts, if desired. Pour into a 9 by 13 pan. Chill.

mother's fudge
3 cups sugar
1/2 cup butter
1 cup whole milk
Dash of salt
4 ounces unsweetened chocolate
1 teaspoon vanilla extract
1 cup chopped pecans or walnuts
Butter an 8 x 8-inch pan. Combine sugar, butter, milk, salt, and chocolate in medium saucepan. Stirring constantly, cook over medium heat until all ingredients melt and come to a boil. Do not scrape down the sides of the pan. Lower heat, insert candy thermometer, and let boil slowly without stirring for about 10 minutes or until soft ball forms when dropped in a cup of cold water (238 degrees F on a candy thermometer). Remove pan from heat and cool. Add vanilla. Beat steadily until fudge loses its gloss. Add nuts. Pour into pan. Cool for 20 minutes and cut into squares. Store in airtight container or wrap in tinfoil.

Coffee and Walnut Fudge ==================== 1.5 lbs caster sugar 8 fl oz evaporated milk 8 fl oz water 4 oz butter 1.5 tsp instant coffee powder 2oz shelled walnuts, roughly chopped. 1. Butter or oil a tin measuring 8in x 5.5in x 1 in. 2. Put all ingredients except the coffee and walnuts into a large heavy based saucepan. 3. Blend the coffee with 1 tbsp water and add to the pan. 4. Stir over a low heat until the sugar is dissolved. 5. Bring to the boil and boil gently to 240f. Stir during the cooking to prevent sticking. 6.Remove from the heat and add the warmed nuts. 7. Place the pan on a cool surface and beat the mixture with a wooden spoon until thick and creamy. 8. When the mixture shows signs of setting, pour it into the tin. 9. Leave until nearly cold and mark into squares. 10. When firm, cut with a sharp knife, with a sawing motion. Makes approx 2lbs.

Five Minute Fudge
1-2/3 cups sugar
2/3 cup undiluted evaporated milk
2 tbsp butter
1/4 tsp salt
2 cups mini marshmallows
1-1/2 cup semi-sweet chocolate chips
1/2 cup chopped nuts (optional)
1 tsp vanilla
1/2 cup raisins (optional) - they might sound strange to add raisins to fudge but it is really good
Mix together marshmallows, chocolate chips and nuts and raisins if using ad set aside.
Combine sugar, evaporated milk, butter and salt in a saucepan. Cook and stir over medium heat until mixtures comes to a boil. Boil for about 4 minutes, stirring constantly.
Stir in the marshmallow mixture and the vanilla. Stir until marshmallows melt and blend. Pour into a 8 inch square baking pan. Chill in fridge for a few hours. Cut into squares. Store fudge in the fridge.

Creamy Chocolate Fudge
1 (7 ounce) jar marshmallow creme
1 1/2 cups white sugar
2/3 cup evaporated milk
1/4 cup butter
1/4 teaspoon salt
2 cups milk chocolate chips
1 cup semisweet chocolate chips
1/2 cup chopped nuts
1 teaspoon vanilla extract
1.Line an 8x8 inch pan with aluminum foil. Set aside.
2.In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly.
3.Remove from heat and pour in semisweet chocolate chips and milk chocolate chips. Stir until chocolate is melted and mixture is smooth. Stir in nuts and vanilla. Pour into prepared pan. Chill in refrigerator for 2 hours, or until firm.

My personal standby is the one on the back of the marshmallow cream jar! You can never go wrong with this one!
1 12 oz package chocolate chips
1 cup butter
3 cups sugar
1 tsp vanilla
1 jar marshmallow cream
1 small can condensed (not sweetened condensed!) milk
Pecans or walnuts (opt.)
Mix butter, sugar and milk in large sauce pan and heat. Bring to a rolling boil and cook for 5 minutes. Remove from heat and stir in vanilla, marshmallow cream, and chocolate chips. Stir to blend and add nuts. Pour into prepared pan immediately and let cool. Cut into cubes.

Remarkable Fudge
4 cups of sugar
2 5 oz. cans 1 1/3 cups evaporated milk
1 cup butter
1 12 oz. bag of semi-sweet chocolate chips
1 7 oz. dark chocolate candy bar cut up
1 7 oz. jar marshmallow crème
1 cup chopped pecans
1 tsp. vanilla
Line a 9x13 pan with foil extending over sides butter foil. Butter sides of heavy 3 qt. saucepan. In saucepan combine sugar, evaporated milk and butter. Cook and stir over med. heat till mixture boils. Reduce heat, continue cooking and stirring for 10 mins. Remove pan from heat. Add chocolate pieces, cut up chocolate bar, marshmallow crème, pecans and vanilla, stir until chocolate melts and mixture is combined. Beat by hand 1 min. Spread in pan. Score into 1-inch squares while warm. When fudge is firm, lift out of pan and store in cut up pieces in covered container in fridge.
I would recommend using a high grade of chocolate for fudge i.e. Lindt or Ghiradelli

Chocolate Peanut Butter Fudge
INGREDIENTS
3 cups white sugar
1 cup evaporated milk
1/4 cup cocoa
1/2 cup peanut butter
1 tablespoon butter
DIRECTIONS
Butter one 9x9 inch pan.
Combine the sugar, evaporated milk and cocoa in saucepan. Stir over high heat until mixture comes to a rolling boil. Lower heat to medium and continue cooking to a soft ball stage.
Remove from heat, add peanut butter and margarine. Beat by hand until creamy; pour into prepared pan. Allow to cool and cut into squares.
