Before I amswer let me first say, I have friends that are LDS, s I don't hate them or anything. I think the reasron is that the LDS church wants a commitment before it explains all the LDS doctrine, especially the truly bizarre points. Talk to the missionaries and they will point to the parallels between main line Christianity and judaism. It's much harder to find out about the huge differences between the LDS church and others, or the strange beliefs and practices they follow.

I don't know where you get that idea, but before becoming an LDS member, I was told about the tithing, the word of wisdom, the Temple, etc.
I doubt a missionary would forget to mention such important things to new converts.

Such important doctrinal issues are explained before receiving a commitment to baptism. Once an investigator commits to baptism after knowing for himself the Church is true, the doctrines fall into place and are readily accepted as well.
Many years have passed since my baptism, and since I was convinced of the truthfulness of the Book of Mormon, I felt everything would fall into its rightful place--as it did.
