A couple of nice ideas for you to consider.

Chicken.
Poach your chicken pieces in some stock and set aside, until cool enough to handle, and de-bone.
Pasta.
Place in salted boiling water and cook until you get the degree of cooking you like.
Penne or Elbows will do very well here.
Sauce.
Make a normal white sauce and add some grated tasty cheese, remove from heat and stir until it is smooth.

Combine everything and place in an oven proof dish, sprinkle with more cheese and bake until it is bubbling and the cheese has melted and started to brown.

Lemon Honey Pie.
500g (1lb) Sugar.
125g (4 ozs) Butter.
4 Eggs.
Zest and Juice of 4 Lemons.
Grate the yellow parts of the lemons (avoid the white pith as it is bitter), strain the juice, beat the eggs a little.
Put all the ingredients into a double saucepan or put in a basin and stand in hot water.
Cook slowly until thick and smooth.
Cool.
Pour into pastry shell.
Pour some into sterilised jars whilst hot and cover when cold and use as a spread on your bread.
You can make it more tart by adding less sugar.

Depends on your budget and overall desire to cook, but here are a couple of menus:

1. Baked chicken with artichoke hearts and feta
Rice Pilaf
Fresh green beans with lemon butter

2. Grilled Rib-eye steaks
Twice baked potatoes
Fresh asparagas

3. Grilled chili rubbed porkchops
Grilled pineapple and bell peppers
Cole Slaw with toasted sesame seeds
Sweet potato dinner fries with kosher salt and ground
black pepper

4. Pork Tenderloin (package marinated)
peas and pearl onions
mashed potatoes

Each of these is not time intensive and can be made easily.

Chicken with Artichoke Hearts: drain one can of artichokes (reserve brine), coarsely chop and blend with 1 4 oz package feta cheese and 3 T chopped chives. Cut a pocket in each breast and place 1 - 2 T filling in each one. Place in baking dish and add a little water or white wine, cover and bake at 350 degrees for 45 minutes to 1 hour. Take liquid from artichoke hearts and blend with 1/4 cup white wine and 1 tsp dijon mustard. Bring to a boil and simmer until slightly reduced. Season to taste. When chicken is finished, top with sauce.

Ribeye Steaks: rub each steak with a mixture of kosher salt, garlic powder, rosemary, ground pepper and celery salt. Set aside while grill heats. Sear on each side and remove from direct heat. When grilling is almost finished, baste with a mixture of barbecue sauce mixed with cherry jelly.

Chili rubbed porkchops: blend 1 tsp kosher salt, 1 tsp chili powder, 1 tsp cumin, 1 tsp ground black pepper and rub liberally into meat. Set aside while grill heats. Sear meat on each side and remove from direct heat.
