Just doubling would call for two teaspoons of thyme, but spices & herbs do not usually fall in line with the doubling trick ,from experience in general cooking & okra which we use a lot in Indian cusine,I would say play safe, use just a teaspoon & a half.

A pound is 16 oz so 1 1/4 pound is 20 oz. You would use 2 teaspoons if you were just doubling the recipe. That will probably work fine. Sometimes you have to be careful with spices because doubling doesn't always work the way you think -especially in baking. Hope this helps and your recipe turns out.

1 teaspoon thyme and 10 oz or 0.625 lb of okra

so 1/4 lb of okra will need about 0.4 teaspoon - let's just call it 1/2 teaspoon
