Ahh, a fine point, I'm a bit jealous that I didn't come up with this particular question myself when I was going through different problems with creationism (I focused more on astronomy). Anyway, I would assume that the problem would be disregarded in a similar way that Adam and Eve were able to have grandchildren, as God is all powerful, he'd be able to pull people fully formed into existance when necisary...
Or they could relate this to God directly intervening and changing people, with the tower of babel or however that particular Christian believes races popped out of nowhere...

God built all races and types of humans into Adam. Some types of humans were no doubt lost in the flood. But Noah still contained the dna to continue a wide array of human life.
As the centuries pass humans have grouped into more alike groups and continue to multiply. As we are far away from initial creation we do not have the same type of genetic make-up anymore. It's almost like how dogs are made pure-bred. When you stop mixing things up you just get more of the same thing.

All men are not descendants of Noah. At the time of the flood, God was dealing with a certain nation, who were wicked and rebellious. The flood wasn't a worldwide effect. In the same way how God dealt with Sodom and Gomorrah and destroy those two city with brimstone and fire, it did not have a world wide effect.
