I made something new and pretty yummy tonight. I took 4 chicken breasts and coated them in shake and bake. Put them in a 13x9 dish and bake for around 20 minutes at 400 degrees. (mine took 25 minutes, depends on the thickness of the chicken) When that comes out mixed a half can of cream of chicken soup (or you can use cream of mushroom or cream of celery, cream of broccoli would work too) with a quarter cup of milk. Pour that over the chicken and then sprinkle the top with some shredded cheese. Put it back in the oven for around 5 minutes and then enjoy. I put mine on top of a bed of rice. It was really yummy and 2 out of my 3 kids even liked it. (the 3rd one is a very picky eater) I hope you find something yummy for dinner tonight.

I say steaks (or burgers) on the grill. maybe add some grilled shrimp scampi

potato or pasta salad or grilled asparagus
Grilled Shrimp Scampi
Shrimp marinated in lemon, garlic, and parsley for 30 minutes, then grilled. Can be used as an appetizer or main dish.
1/4 cup olive oil
1/4 cup lemon juice
3 Tbs chopped fresh parsley
1 Tbs minced garlic
ground black pepper to taste
crushed red pepper flakes to taste (optional)
1 1/2 lbs medium shrimp, peeled and deveined
1 In a large, non-reactive bowl, stir together the olive oil, lemon juice, parsley, garlic, and black pepper. Season with crushed red pepper, if desired. Add shrimp, and toss to coat. Marinate in the refrigerator for 30 minutes.
2 Preheat grill for high heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. any remaining marinade.
3 Lightly oil grill grate. Grill for 2 to 3 minutes per side, or until opaque.

Try sauteed spinach over brown rice.
Cook 2 boneless, skinless chicken breasts cut into 1/2" pieces for 8 minutes in olive oil with sliced fresh garlic and juice of half a lemon. Add a medium onion, sliced thinly, then some pepper and simmer for 2-3 minutes.
Put 1/2 pound of clean, dry spinach in the pan and immediately turn the heat off. Stir once to heat the spinach, let sit for 1 minute, then serve over steamed brown rice.
Mmmmmmm!

I think you should make Pork Chops in Tomato Basil sauce.Served with Cream Cheese Mashed Potatoes and Corn on the Cob...
1.Lightly brown some Pork Chops.Then add a couple cans of stewed Tomatoes cut up fresh Onion into thick strips (white or yellow onions)add those.Add fresh basil or dried whatever you prefer...Simmer till Pork chops are cooked all the way threw...
2.Make Mashed Potatoes as normal then add Cream Cheese with milk,butter,and salt and pepper to taste...Blend well.
3.When cooking the corn on the Cob add sugar to the water makes the corn sweet tasting..Not sugar sweet just juicy sweet...MMMMMMM GOOD It's not necessarily fast but it easy and good...

Six Can Chicken Tortilla Soup
Serve over tortilla chips, and top with shredded Cheddar cheese.
Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready In: 20 Minutes
Makes: 6 servings
Ingredients
1 (15 ounce) can whole kernel corn, drained
2 (14.5 ounce) cans chicken broth
1 (10 ounce) can chunk chicken
1 (15 ounce) can black beans
1 (10 ounce) can diced tomatoes with green chile peppers, drained
Directions
1. Open the cans of corn, chicken broth, chunk chicken, black beans, and diced tomatoes with green chilies. Pour everything into a large saucepan or stock pot. Simmer over medium heat until chicken is heated through.

How about Poppy seed Chicken.
Ingredients:
1 lb. Boneless Skinless Chicken Breasts
1 can Cream of Chicken Soup
1 8 oz container Sour Cream
¼ c. Milk
1 tsp. Salt and Pepper
1 tbsp Poppy Seeds
1 sleeve Ritz Crackers (CRUSHED)
¼ c. Butter (MELTED)
Boil Chicken breast with salt and pepper until fully cooked (about 20 minutes).
Preheat oven to 350°.
Chop or break up cooked Chicken into small bite size pieces.
Mix Chicken, Sour Cream, Cream of Chicken Soup, Milk, Poppy Seeds.
Pour into a glass baking dish.
Top with Crushed Ritz Crackers then drizzel with melted butter.(helps with browning of cracker topping)
Bake for 20 minutes or untill brown, hot and bubbly.

I discovered a nifty little thing- kabobs. If you just put chicken in a sauce, completely coat it, then alternate chicken and veggies (i used peppers, onions, and zucchini) and grill it. An ideal side dish is a fresh fruit salad. But, otherwise, i would just recommend chicken in a yummy sauce of your choice over rice and a salad.

Prawn stir fry - you need king prawns (cooked or raw), some good soy sauce, garlic, sweet chilli sauce (if you have it), fresh root ginger (optional), spring onions. Marinade the prawns in mixture of all above, to your own taste. Then stir-fry over high heat until bubbled down. Cook some noodles and serve - only takes 5 mins to cook + marinading time.

Boil some chicken breasts and make Chicken Salad and serve on sandwiches or stuff in a tomato half.
Steam some fresh veggies on the side: season w/ S&P , a little butter, and lemon juice.

It was a workday for me & I just got home so we are going to throw a couple of black angus beef burgers on the grill ( my future in-laws raise beef on their farm, so I have plenty) Probably will serve with some pasta salad, baked beans & fresh cantelope for a quick dessert.....
