Yes, you can. The late Leo McKern, the actor, hated flying so he used to travel the world by ship. There are no regular passenger ships running any more but various freight companies take passengers. You won't have casinos, balls and fancy dress parties but you will have a cabin and a pleasant trip.

Sea travel is a specialised service and many travel agents don't handle it but there are some that do. I'd make enquiries particularly in agencies in the port cities. Hunt around on Google and see what comes up. Enjoy the trip.

Well, in the days of the "Ten pound tourist' there was no other way.
In these days of cheap air travel, the way to get to Australia as a traveller is by air.
There will somewhere be very expensive cruises, but that is cruising, not travelling.
There is one hell of a lot of water between where you are and Australia, so obviously you can get there by boat, particularly if you have your own. Watch out for pirates though.

Not a very good idea considering that it takes around 24hrs to fly form the UK to Australia so a boat would take probably double that.
