Learn Spanish first. Then Latin (if you still have no access to Italian).
You could also ask your parents to get you the Rosetta Stone product.
You can get a free program from http://byki.com/fls/ital/italian.
It's called Before You Know It Lite and will help you start to learn Italian.
Another thing you could do is ask your parents if they would pay for a tutor for you this summer. Some college kids may be looking to tutor for extra cash and may not charge more than $20 or $25 a week. Or go to your local library and check out books/CDs for free! I am sure they have resources to learn Italian - just ask at the front desk if you need help.

It's kind of expensive, but I did Rosetta Stone for my second year of German in high school and its a really excellent way to learn a language. If you want a cheaper alternative you can also look at used college textbooks and buy an introductory book on italian to work out of.

Learn Italian on your own if it interests you that much - either through at-home courses or maybe through a local community college if there is one near you.
As far as language credit requirements for school, Spanish makes the most sense. It is the second most commonly spoken language in the U.S., and of course many countries have Spanish as their native language.

I believe that in many school districts, if your public school doesn't have a subject you want to study, you can transfer to another public school that does. Research which schools in your city or county or district teach Italian, then ask your principal or your school board about transferring to that school next semester.

the only reason why they don't have italian at your high school is because spanish and italian are very much alike, and it would be pointless to have two languages that are so similar.
try french,spanish, or latin.
