You don't have to stick to one saint. All of the various saints are devoted to God, and that is really who you're glorifying in the end.

You can be devoted to more than one saint. The more saints you pray to, the more the intercession before God. But if there is just one saint that you are specially devoted to, that is fine as well.

You should be devoted to God, not "saints." The Bible never instructs a child of God to pray to saints. We are directed to pray to God. Saints are people who have died and gone to heaven because their sins have been paid for by the Lord Jesus Christ. No person can ever get to heaven by doing "good" works.
The central theme of the Bible is the Lord Jesus Christ-God in the flesh-Immanuel. I would suggest that youstart reading the Bible (KJV). Read slowly and prayerfully asking God to help you to understand and be obedient to what He says.. Jesus said, "If you love me, keep my commandments." (John 14:15)

Your devotion should be to Christ. Also, the Bible says that all believers are saints.
