the answer is the herbs that are used.........
if u lok in your local big supermarket they will have diffrent herbs........
you can get spanish herbs wich is wht u make spanish chicken with,
and italian herbs obviously got into the italian.....
i make them the same the only diffrence being the herbs (mentioned above) and i put cayenne peper in the spanish chicken
what i do is;
cut some chicken meat (i use breast cuz its easier) but you can use leg meat which is tastier, but u have to remove it from the bone.
cut it into mouthsize pieces and put in the frying pan with some olive ioil
fry untill olden and add lots of garlic, onions mushrooms, peppers (in the spanish i add chorizo,cut into small pieces), then once the mushroom have shrunk a bit and the onions cooked i add a tin of tomatoes and lots of hers (either spanish or italian)+paprika... and some cayenne peper for the spanish....and simmer for 30 mins so all the flavuors mix in together
then serve with whatever you want..........spagetti,bread,rice,
i like it with a nice garlic ciabatta roll.
sorry i cant tell u what herbs are italian or spanish but ur local supermarket will have therm all prepackeged and they are just as good as fresh

With Spanish chicken the meat is normally yellower because they tend to corn feed them more. A good and very simple chicken recipe is to stuff some sage and some bacon under the skin and cook for the normal time- good served with a simple green veg and some creamy potatoes....

Italian style chicken is more Italian herb oriented, whereas Spanish or Mexican chicken are more chile oriented

Sorry, cooking wines are a salt drenched joke. NEVER use Cheap supermarket cooking wines. Stores like ALDI feature dry white wines for less that 4.00. You cant go wrong with that. In my experience even dry sherry is slightly sweeter than dry marsala. I really believe it is a matter of personal taste.
