Creamy Macaroni and Cheese
1/3 cup butter
1/3 cup flour
Salt and pepper to taste
2/3 cup milk
2 cups cheddar cheese, shredded
2 cups uncooked macaroni, cooked until tender and drained
1 cup sour cream
Cook macaroni until tender, drain.
Melt butter in a saucepan, add flour and salt and pepper stirring constantly. Add milk and cheese and continue to stir until mixture starts to thicken. Add sour cream and macaroni and continue cooking for several minutes over low heat. Serve immediately.
ANOTHER --
Easy Macaroni & Cheese
2 Cups uncooked macaroni
2 1/2 Cups boiling water
2 Cups cottage cheese
8 oz. shredded Cheddar cheese
1/2 stick margarine
Mix all ingredients together and bake 45 minutes at 375 deg.

This recipe makes the best stop top mac I have ever tried.
Alton Brown's Good Eats stove top macaroni and cheese :
1/2 pound elbow macaroni
4 tablespoons butter
2 eggs
6 ounces evaporated milk
1/2 teaspoon hot sauce
1 teaspoon kosher salt
Fresh black pepper
3/4 teaspoon dry mustard
10 ounces sharp cheddar, shredded
In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.
Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.

This is how I make it, though I can't tell you precise measurements! This combination of cheese is something I really like - it tastes really creamy but still sharp, like good aged cheese.
butter
flour
milk
nutmeg
salt
pepper
Coleman's English Mustard (powder in a tin)
Velveeta
sharp cheddar cheese
jack cheese
gemelli or macaroni
breadcrumbs
Make a roux with butter and flour (abou 2 T each) in a large saucepan. Allow it to brown a bit. Stir in milk a little at a time, incorporating each addition into the roux before adding more. When you have a thin white sauce, add a few shakes of nutmeg (maybe 1/4 tsp.) and several grinds of pepper. Melt in about a 1/2 cup of cubed Velveeta, stirring until smooth. Melt in about two cups of shredded natural cheese a little at a time, stirring to keep the sauce smooth. When it tastes cheesy enough to you, stir in about 1/2 tsp mustard powder and salt to taste. Remember that the sauce will be "diluted" when you add it to pasta, so it'll taste pretty strong on its own. Keep the sauce on low heat, stirring occasionally, while you cook the noodles. Stir the cooked noodles and sauce together and pour into a shallow baking dish. Scatter breadcrumbs and additional grated cheese on top to make a crust. Bake at about 375 degrees for 30 minutes or until bubbly and crisp on top. Allow to cool for 10-15 minutes before serving.

i have the perfect recipe:
use large elbow macaroni noodles, boil these
cut up squares of velveeta cheese, set 2 side on plate
tub of butter
salt n pepper for taste
now, what u wanna do is layer these ingredients. noodles first, spread around lil teaspoons of butter on top of that, then the cheese you cut up, repeat. Its SO creamy and cheesy. everyone raves over my mac n cheese :o) good luck!
