The recruiter we have been talking to just says you will be assigned to a unit and that determines where you end up. However, I am sure they don't just mix everyone up and throw intel guys in with infantry etc. Does anyone know how they are generally organized?

Well, your MOS will determine what unit you end up in when you get assigned a higher parent unit. For example, you could be assigned to the 3rd Infantry Division, but that's just the parent organization. There are 3 brigades under the Division and multiple units of differing classification under the division and brigades. So, if you are an intel soldier, you may end up somewhere the parent organization has 'infantry' in the title, but that doesnt mean you are going to be doing infantry stuff. Your MOS will determine the amount of 'army stuff' you will do. If you want to be outside alot, shooting weapons, go infantry. If air conditioners and (more than likely) a consistent work week are more your thing, do something like admin. where you will always be around computers.

There is also some interpretation left in what you mean by "where you end up" If you go airborne, you are gonna end up at Ft. Bragg. If you go air assault, you are gonna end up at Ft Campbell. So, if that's what the recruiter means, then, just ask him to explain to you your options more clearly. And if the recruiter doesnt seem to want to spend that much time working with you, they arent doing their job. Act like you are uninterested or like you have been talking to the Marine Corps recruiter, and he'll straighten right up.

There are many different units in the Army but generally they are organized like this :
A fire team is the smallest unit 4 soldiers
There are 3 fire teams in a squad
3 squads in a platoon
4 platoons in a company ( if you serve in an Artillery unit a company is called a battery for historical reasons.)
4 companys in a Batalion
3 batalions and a head quarters batalion in a regiment.
3 regiments in a brigade
3 brigades in a division , the Army only has 14 or 15 divisions.
This is how units in the Army and Marines are organized. The Air Force, Navy , and Coast Guard are very different.

Individuals make up a squad, about 4 or 5 squads to a platoon, about 4 or 5 platoons to a company or unit, 4 units to a battalion, 4 battalions to a brigade, 4 brigades to a regiment,4 regiments to a division,4 divisions to an Corp,4 corps to a Army,and finally multiple Armies within the US ARMY which is one of five major branches of the military! Have you ever imagined that so many people could have a death wish all at the same time?

Army units are usually soldiers with similar MOS's. Those units usually perform a specific within a Battalion. That battalion performs a specific function within a Division and so on...

A Headquarters Company may have the necessary soldiers to perform the daily functions of the running of a units "office". You might have a cook, the unit mail person, the commanders driver, the radio operator, and the mechanic all together in one platoon.

The Job that you choose will determine where you will be assigned. As stated Airborne and Air Assault generally end up at specific places ( although there are exceptions. For example there was a company of 82nd Airborne stationed at Ft. Hood, Armor central.) The job is the key.

You are assigned to a company, and in each company there are aprox 4 platoons. ( I was a female soldier from1986-1990,in the arm)

Your company will be filled with people that genarally do the same job: example: infantry, cooks, quatermaster, artillary; medical. . ...

I dont suggest any one join the armed forces at this time, and definately not the infantry. Your recruiter gets alot of pay to lie to you and make you see the military through rose colored glasses. At least if you feel you must go, sign up for a skill that you can get paid to do when and if you make it out alive.
