It can be a bit bland that way, but is great if you add a bit of garlic salt and pepper. Crush the flakes, put them in a bag with the pepper and garlic salt.
Wet the chicken (or pork chops) with water or a beaten egg or milk or even pineapple juice (from a more tropical effect). Immediately shake in the bag of crumbs. then put on a lightly greased (or cooking spray coated) cookie sheet.
Now, if you like your chicken less crispy, substitute potato flakes (for instant potatoes) for the corn flakes.

Absolutely... there are several recipes for chicken that use corn flakes. Kellogg's use to have a recipe on the box for chicken. The simplest recipe that I know is to take the corn flakes put then in a zip lock and crush them with a rolling pin. Then add salt, pepper and your favor ate poultry seasonings to the bag. Dip the chicken in a mixture made from two eggs, and two cups of milk. drop the dipped pieces of chicken into the corn flakes and spices and shake. Then you can fry the chicken or bake the chicken.

Crush the corn flakes finely.
Dip chicken in a wash made of egg and milk (water).
Then roll in the corn flakes to cover.
Make sure your pan and oil are hot before placing the chicken in the pan.
Works very well for fish also.

You could absolutely just crush the corn flakes and coat the chicken. You could also be more creative adding spices etc. I found a recipe from weight watchers once that used skim milk, crused corn flakes, sesame seeds, and salt and pepper. The sesame seeds add a nutty taste. Just coat the chicken in the skim milk, and then roll in the crushed corn flakes with the sesame seeds added. Bake at 375 for about 20 minutes for boneless breasts.

You should marinate the chicken, crush the corn flakes and dip the chicken in egg first. The egg helps the corn flakes stick to the chicken when frying.

Make breading for fish or chicken with crushed cereal. Dip chicken and fish in beaten egg or Dijon honey mustard, then dip in crushed corn flakes. Crush corn flakes or other cereals by pouring them in a zipper bag and rolling over the bag with a rolling pin. Be sure the bag is sealed tightly, or you'll have a huge mess on your hands.

Yea, my mom does it, and it is very good!
I believe she takes the chicken and dips in lightly in egg yolk (so the corn flakes will stick to it.)
CORN FLAKE CHICKEN
1 sm. can evaporated milk
1 egg
Cut up chicken
Salt and pepper to taste
Kellogg's corn flake crumbs
Beat egg well. Stir in milk. Dip chicken in milk and egg then roll in corn flake crumbs. Place in foil lined pan. Season with salt and pepper. Bake at 375 degrees for 1 hour.

Yes they can. Also potato chips. My husband makes an awesome chicken dish with boneless skinless breasts, and jalapeno flavored chips. He dips the chicken in an egg+milk wash and then rolls each piece in the crushed chips. He bakes in a 350 degree oven. You can also use cornflakes (no sugar) on chicken that has been bathed in ranch dressing and bake the same way.
