I'm looking for a recipe for Mexican meatballs in a crockpot. We are doing a Mexican food buffet for a graduation open house. Something similar to the cocktail meatballs, except using an enchilada or taco seasoned flavored sauce in place of the barbeque and grape jelly sauce recipe. I will use 2 bags of the pre-made 5 lb frozen meatballs. Anybody have any good recipes or ideas?

By the time you throw in any really spicy Mexican sauce the meatballs will taste good enough that anyone will enjoy them without your having to make any special effort.

To add a distinctive touch for the party you can try getting a variety of those little bottles of very hot sauces (Red Hot, Green Hot, Insane Hot, Cheech's Gnarly, One Drop Blazing, Chipotle Devil, etc.) so that anyone who wants to kick their portion up to searing can toss some into their plate.

You can grind canned tomatoes, garlic, onions, chipotle peppers and salt in a blender to make a sauce that you then cook in a skillet with some oil until it turns a dark red color. you can then place it in the crockpot and it will keep for a long time. Allow it to thicken and add the meatballs, they taste better if you brown them first in a skillet. You might try to do that with green salsa as well. Mind you, in this case the crockpot is only used to keep this hot.
