Hi this sounds like pretty radical surgery.

Without a pancreas you will need to take insulin to enable glucose to be able to enter the cells including those in the brain and digestive enzymes to assist the body digest and absorb nutrients from the food you are eating. This is because the panreas is both an endocrine and exocrine gland. Talk to your Doctor and listen to their advice on diet and supplements. Natural therapies will probably not work alone but you could combine both
