not mango chiffon cake pls...thks=)preferably a simple recipe...

Mango Cake

"A delicious way to use my favorite fruit. If you don't have buttermilk, you may substitute sour milk. Stir 1 tablespoon of vinegar or lemon juice together with 1 cup of milk and let stand for 10 minutes."

Original recipe yield:
1 - 9 inch loaf

INGREDIENTS
1 1/2 cups all-purpose flour
1 teaspoon baking soda
2/3 cup butter
1 cup white sugar
2 eggs
1 cup buttermilk
1 teaspoon vanilla extract
1 cup mango puree
1/2 cup chopped walnuts
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease a 9 x 5 inch loaf pan.
Cream butter or margarine and sugar till light and fluffy. Add eggs and beat well. Mix together flour and baking soda; blend into creamed mixture. Fold in buttermilk, vanilla, mango puree, and chopped nuts. Pour batter into prepared pan.
Bake for 40 to 50 minutes, or until done.

I found this recipe on allrecipes.com. I am sure you could swap out the apricot and use mango. It sounds excellent. I will definitely be adding it to my recipe file. Hope this helps you out! Have a Blessed day! :)


Apricot Sponge Cake

INGREDIENTS
1 1/4 cups cake flour
1 1/4 cups white sugar, divided
1/2 teaspoon salt
1/2 teaspoon baking powder
5 eggs
1/4 cup apricot nectar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Sift together the flour, 3/4 cup sugar, salt, and baking powder. Separate the egg yolks from the whites. Add the egg yolks to the flour mixture along with the apricot juice and vanilla and almond extracts. Beat on low speed of an electric mixer for about 1 minute.
Wash beaters well before beating egg whites. In a glass or metal bowl (don't use plastic) beat the egg whites until fluffy. Gradually beat in 1/2 cup of the sugar and continue beating until stiff peaks form.
Gently fold the egg yolk-flour mixture into the egg whites about 1/4 at time. Don't stir or cake will not be spongy. Gently turn batter into an ungreased tube pan.
Bake for about 40 to 50 minutes. Immediately turn pan upside down and let cool. Once cake is cool remove it from the pan.

Mango Cake

2 1/2 cups peeled and mashed ripe mangoes
2 cups sugar
2 eggs
2 cups all-purpose flour
2 teaspoons baking soda
1 cup chopped pecans or walnuts
1 teaspoon vanilla extract
4 ounces cream cheese, softened
1/4 cup butter or margarine, softened
2 1/4 cups sifted powdered sugar
1 teaspoon vanilla extract

In a mixing bowl, add the first 3 ingredients; stir to combine.
Add in the flour, baking soda, pecans, and 1 teaspoon vanilla; stir to combine.
Pour batter into a greased and floured 13x9 inch baking pan.
Bake in a 350° oven for 35-40 minutes or until pick comes out clean; let cool.
In another mixing bowl, combine the remaining ingredients; stir to mix well.
Spread over the cake.
Cut into squares and serve.

Always the Best Sponge Cake Recipe

1 cup
4 Tb
1 cup
1 tsp
Eggs, separated
Sugar
Cold water
Sifted cake flour
Baking powder

Whipped cream
Sliced strawberries


Oven Temp ~ 325° Baking Time ~ 30 Min.
Pan Type ~ small angel food pan

Preheat oven, grease a small tube pan.
Beat egg yolks and sugar together until very light. Add water. Sift together flour and baking soda. Add to batter. Beat egg whites until stiff. Fold into batter. Pour batter into prepared pan.

Bake. Cool completely and invert onto cake platter. Prepare whipped cream and strawberries. To serve, slice cake in half and fill with half the whipped cream. Top with remaining whipped cream and strawberries.
